The whole family like it a lot. I used less then half of the butter. I used just enough to saute the onion and zucchini. After adding the corn I added some left over white rice and heated it through. Then I topped it off with some shredded parmigiana cheese. I will defiantly make this again.

Black Bean and Corn Quesadillas

Yummy! I did leave the red chillies and butter out. The salsa I had was a El Pinto smoky chipotle. My 8 year old loved it along with my husband.

Key Lime Pie VII

This pie was easy and yummy! I use 20 key limes and had more than enough. Two cans of condensed milk worked great. I might leave out some of the lime zest, it had a slight bitter taste. Lime skins are so thin. I did make a whip cream with heavy cream and some left over lime juice and powdered sugar. I spread a small layer over the top. I will make this again.
