Drunken Ribs

I received so many compliments on these ribs! I boiled the ribs at home and then left them soaking in the marinade. Then place them on the grill and basted to add flavor. GREAT recipe! You do not need that much beer. I used only 2 bottles. It makes enough bbq sauce for you to keep and use later.

Fried Soft-Shell Crab

These were GREAT! Be careful though--I defrosted mine in water because I was in a hurry--some of the legs and claws fell off as I was battering. Next time I will make enough time to defrost slowly. I added Old Bay as well as others had. Eat immediately after preparing!

Over the Fire Scalloped Potatoes

This is a great recipe. I find that instead of dicing the potatoes that slicing them works best. I also use one aluminum pan covered with foil and add the cheese at the end of cooking.

Always a hit at parties. I love the mushrooms in this. I have changed this up quite often by adding mexican Velveeta cheese to give it a little more kick and ground beef instead of sausage.

Baked Ham

If you like ham to taste like ham--this is the recipe for you! Excellent flavor. It was so moist and literally did fall off the bone. I made it exactly like the recipe stated and it was PERFECT!

Absolute Mexican Cornbread

Excellent recipe--made exactly as written the first time. Has a nice little kick and the husband likes sweet cornbread anyway-its a happy medium. However, we like it a little more spicey so I chopped 2 jalapenos-seeds removed and added for the last two times made--oh and leave the mixture sitting in the mixing bowl for about 10 to 15 minutes (if you have the time) before you pour into dish to cook--it won't be as greasy!

Buffalo Shrimp

According to my husband this is the best shrimp that I have ever made. (I make alot of seafood dishes.) It was very easy and tasted just like the Buffalo Shrimp I had on the coast in Savannah years ago! Served with Blue Cheese and used Franks Hot Sauce.

Christmas Breakfast Sausage Casserole

Definately use the white bread instead of wheat--we usually don't keep white on hand so I have used both in this recipe. I don't know why but the wheat seems to dry the casserole out more. Try this casserole--you won't be disappointed.

Salisbury Steak

Based on the recipe exactly as stated it has way too much ketchup for my taste. I decreased the last several times I have made this to only a couple of tablespoons ketchup and it was definately a five star recipe!

Don't leave out the grenadine--it adds the touch of sweetness that this drink needs! I did use citrus vodka--which could be why it tasted so much better with the grenadine!

Sweet Grilled Corn

I am ALWAYS looking for tailgating and grilling recipes--this was amazing! I am sad to say that I have only tried it with olive oil and not the nut oil it called for--unavailable unless I drive for an hour to a bigger city! I will get that and let you know then if it makes a difference! We are doing this corn again this weekend for a nascar tailgate. GREAT GREAT GREAT recipe for corn! I have done both fresh and frozen--both work wonderfully!

Beautiful Risotto for mushroom lovers! I didn't have the Arborio rice on hand the first time that I made this so had to use long grain. It turned out great with both kinds of rice!

Garlic Prime Rib

Oh my GOSH! EXCELLENT! I was almost scared to try this due to the price of the prime rib at my butcher's. However, it came out perfect! If you don't like garlic--don't try it! I put garlic in almost everything! My mom loves prime rib and didn't like this due to the garlic. I made exactly as the recipe called and stuck my meat thermometer in to time--it was perfect as listed. Medium 130 degrees on timer after it sets for a momemt it will finish cooking to 140.

Asian Beef Skewers

Maybe I did something wrong with what I ended up having to substitute. None of our grocery stores or my butcher had flank steak available so I used what the guy told me would be about the same. I also used this marinade on some sirloin that I had left in the fridge from the family pack last night. Maybe I marinated to long because they didn't brown well and came out mushy. (36 hours--obviously too long) I couldn't find Hoisin sauce either so I have not a clue as to what that would have added to the flavor. I have every asian sauce but that one! This is also too much ginger for me. I have decided that I don't like fresh ginger at all now--my skewers tasted too much like a lemon! I will try again when I find the sauce and I will have the butcher order flank steak for me.
