Chicken Asparagus Roll-Ups

Made this for dinner. The sauce is quite good; the lemon/tarragon combination is excellent. I made rice as a side dish but think garlic mashed potatoes would work better. This dish could easily impress invited dinner guests. Monica, thank you for sharing.

Southwestern Cactus Salad

I grew up with "Nopalitos" and as another reviewer stated it important to DRAIN off & RINSE the slime. In my family we use canned sliced jalapenos and sprinkled the juice over the nopalitos too. The amount you use is up to you cuz it could vary from mild to hot. We add approx 1 tsp. crushed oregano, I make this as a summer salad along with carne asada. Remember to refrigerate before serving. Absolutely delicious.

Gulliver's Cream Corn

I've been making the recipe for the last 8 years. It's a holiday staple in my house and my family and guests ABSOLUTELY love it. I melt the butter in the microwave and then blend flour into it finally I add it to the corn mixture and let simmer. Pour into to a serving dish and just put a dash of cayenne pepper before serving. This side dish is HONESTLY TO DIE FOR!!! IMO, you don't need the accent or msg.

Chocolate Ganache

Very rich and decadent. Poured over my chocolate cavity maker cake. Glazed over beautifully added fresh rasberrys and this cake looked GORGEOUS!

Hot and Sweet Dipping Sauce

Awesome!! I made it as a dipping sauce for the Chinese Firecrackers and it was a hit!! Since I'm on Weight Watchers, I substituted the Sugar with Splenda. ..No one knew the difference!! I like spicy so anyone else should try a little chili at a time, but it was perfect for me.

Aunt Carol's Apple Pie

Absolutely DELICIOUS!! I've now made this pie 4 times and it is a hit everytime time! It makes a BIG,BEAUTIFUL PIE. If you don't want to make your own crust I buy the refrigerated roll out crusts which I roll out a little bit more. The final presentation with the sugar topped crust is so eye appealing. IT TRULY IS THE BEST APPLE PIE!

Old Fashioned Apple Dumplings

Since the market didn't have large Granny Smith apples I bought 8 smaller ones. I also bought pre-made roll out pie crust, and cut them into 4 pieces. Roll them out into triangles and it was easy to wrap the apples in them. It was my first time making apple dumplings and didn't really know what to expect, I can tell you this...This recipe is a keeper!

Cranberry-Jalapeno Relish

I have been making this recipe for years and I get rave reviews each time! I make the recipe for 48 servings. Everyone loves it and wants the recipe. The combination of ingredients make for a WOW factor, this has become a staple for my Thanksgiving Dinner. This recipe will remain in my family for generations to come!! If I could give it more the 5 stars I would!

Black Bean Vegetable Soup

Wow this was GOOD, actually EXCELLENT!! I like spicy, so I varied the chili powder to 1 tsp. Cayenne Pepper & 1 tsp. New Mexico Chili ... this fit the bill, my nose was runny!! It was PERFECT!!! Made me forget about the cold outside. Heated up some Pita Bread and what a meal!! My family loved it. I will definately be making this one again and again.

Italian Sausage Tortellini Soup

I doubled the recipe because of the reviews I read and I LOVED IT! This soup is VERY TASTY. Used fire roasted tomatoes instead of fresh tomatoes and 3 sweet Italian sausages, Next time when I double the recipe I think I'll use the whole pound of Italian sausages. I served with it french bread and it hit the spot. I agree with other reviewers, could easily add corn, beans or whatever else that tickles my fancy. I will definately make this soup again.

Chicken Tortilla Soup I

When I viewed the recipe and read the comments I said I have to make this one. I tripled the recipe because I had guests coming. I bought marinated chicken breasts and BBQ them then chopped them to bite size pieces, I was hesitant to add the hominy, but went ahead and added it and couldn't tell they were in the soup. I also added fresh black pepper and sprinkled with red crushed pepper while simmering. I did serve it with all the condiments; crushed tortilla chips, avocado, green onion and jack cheese. WOW!!!! What a meal!! Absolutely delicious!! EVERYONE LOVED IT!

Garlic Prime Rib

This was my very first prime rib roast and was afraid I was going to screw it up. I'm glad I read to use a meat thermometer, it came out exactly how everyone wanted...medium well and the center was slightly pink. It was SOOOO tender. I got rave reviews and everyone said it was the best. I increased the recipe 1 1/2 times because the roast was 13#, but next time will double it. Loved the combination of herbs!! Just wanted more of it.

Cornish Game Hens with Rice Stuffing

Super easy and super delicious!! I added extra salt, pepper and chopped up rosemary to the sauce before cooking. After cooking I blended the sauce in the blender then reduced it. Amazingly DELICIOUS!!

Chinese Firecrackers

I made these for the 4th of July :) As I cooked everything together I felt it needed something extra so I added sea salt, garlic and ginger...It was perfect!! I finally got the hang of the fillo dough and I made the hot & sweet sauce I found here too. It was PERFECT!! My daughter & I are on weight watchers so I used PAM instead of oil on the fillo dough and used Splenda instead of sugar in the Sweet & Spicy Sauce. I will definitely be making these again.
