Carrot Cake III

Without modifications this recipe is too sweet and oily for my taste. I replaced half a cup of oil with unsweetened applesauce, decreased the sugar in the batter to 1c brown + 1/2c white, and decreased the sugar in the frosting to 2 1/2c. I also added 8oz crushed pineapple. I made cupcakes, which took 22 min to bake. They were plenty sweet and tasted amazing!

Fluffy Pancakes

These were some of the best pancakes I've had! I decided to use buttermilk instead of milk and vinegar. Next time I'll probably trying souring my own milk to compare. Update: I tried using the soured milk, and liked it even better than butter milk! These are the BEST pancakes.

Apple Crisp with Oat Topping

I used granny smith apples and made 1 1/2 times the recipe to fill a 9x13" pan. The apple crisp was good, but I will make a few changes next time. The baking time was too long for my oven and the apples turned to mush. Next time i'll cut the baking time to 25-35 minutes. It also was a tad too sweet for my taste, so next time I'll use less sugar in both the topping and on the apples. And finally, I felt the topping could have used a touch of salt.

Best Cream Of Broccoli Soup

Quick and Easy Pizza Crust

For a no-rise recipe, I thought the dough turned out pretty darn good. Great flavor and thickness, just a tad chewy. Will definitely use again when I'm short on time.

Clone of a Cinnabon

Turned out great. I ended up getting twice as many rolls out of this recipe, because I cut them thin. Perfect amount of cinnamon sugar and the frosting is to die for!

Amish White Bread

This bread is good, but too sweet for my taste. It's almost like Hawaiian bread. Next time I will try it with 1/3 cup sugar or less.

Garden Fresh Tomato Soup

This is a great base recipe. I always double or triple it, omit the cloves, and add seasonings to my taste (thyme, basil, garlic, cayenne, bay leaf..). I like to let the soup cool a bit and add cream. Excellent with grilled cheese!

Zucchini-Chocolate Chip Muffins

Pretty darn good. I don't eat dairy, so I replaced the milk with coconut milk. Used walnut oil, dark chocolate chips, cut the sugar to 1/2 cup, used brown sugar, and replaced 1/2 cup flour with wheat. Not sure I like the wheat flour with the zuchinni, so I may skip that change next time. This recipe was plenty sweet, and probably would have been too sweet for my taste if followed exactly.

Parmesan Chicken II

Like others suggested, I added garlic and oregano to the parmesan. Also 45 minutes was too long for my oven; I ended up taking them out at about 37 minutes.

Country Apple Dumplings

These were good, but SO rich (I even cut the sugar down to 1cup and the Mt Dew down to 8oz). I think next time I will try rolling out the dough a little bit so that I can fill each dumpling with more apple, cut back the butter to 3/4cup, and the sugar to 3/4cup.

Chocolate Mint Candies Cookies

I have made this recipe twice now and love it. The cookies are definitely indulgent; super sweet and rich. My second time making them I melted mini-reeses on half of the cookies, and that was just as good. Thanks for the recipe!

Dark Rye Bread

Excellent recipe! The only changes I made were to increase the caraway seed to 1tsp, and I used light olive oil for the vegetable oil. It turned out perfect! My only complaint is that it makes just one loaf... next time I will double the recipe!!

Cardamom Chicken with Salt and Pepper Crust

This is an excellent, simple marinade. I didn't have enough fresh garlic on hand so I used garlic powder instead. Also, I didn't have time to let the marinade rest, and it came out full of flavor regardless. Definitely a recipe I'll use again!

Summer Lasagna

This was quite tasty, but as other reviewers have mentioned, it is very watery. I salted the zucchini beforehand, and I still had about a cup of liquid at the bottom of the pan. Next time I think I will salt the zucchini for a longer period of time and grill them slightly before assembling the lasagna. I also might use a combination of zucchini and eggplant, since eggplant isn't nearly as watery.
