About this Cook
My husband and I have served as Evangelical missionaries in Spain for twelve years. After spending a fantastic year directing an international volunteer program in Toronto, Canada, we have recently relocated to Greenville, South Carolina. After 22 moves in 28 years I call no place my hometown. My roots are in Jesus Christ.
My favorite things to cook
I love Spanish food! Real Spanish, not Mexican, not Tex-Mex, but Spanish! I make a great paella, and my Tortilla EspaƱola almost always has 'muy buena pinta'.
My favorite family cooking traditions
I have picked up a lot of Spanish cooking traditions. But, Christmas Eve is always Norwegian Meatballs in Gravy with Lignonberries, mashed potatoes, and peas. I picked up recipes from my Norwegian aunt while growing up.
My cooking triumphs
In December 2003 I won an all-village baking contest in Spain for a Raspberry Cheesecake Brownie Pie!
My cooking tragedies
We once had friends over for dinner, and I mis-read a recipe for stuffed pork chops. They waited an extra hour before I was able to serve them! But at least it turned out!

Traditional White Bread
Amazing, perfect recipe! It raised well, cooked perfectly, and tasted wonderful, all according to the specifications of the recipe, substituting corn oil for the lard. This will become a weekly practice for me. If you save a loaf for the following day, it is more manageable for slicing thinly. On the first day, it's so soft and spongy that the slices come out thicker, still, oh so yummy!

Red Velvet Cake I
This cake was awesome!! I didn't change a thing, and everyone loved it! I was a little skeptical about putting the milk and flour mixture into the frosting, but that really made the texture light and fluffy. I forgot to alternate mixing the buttermilk mixture in with the flour, but it came out great anyway. I will surely make this cake again.

Mediterranean Kale
We loved it! I left out the soy sauce, because I thought the salt would be enough. And I added a teaspoon of Garam Masala with the olive oil, garlic and lemon juice. It was a perfect veggie dish, one that I'm sure I'll make again.
