Since moving to Toronto, one of my greatest joys has been volunteering at a nearby temporary residence for refugee claimants. Canada's immigration policy is such that over 100,000 refugees are admitted into the country each year to begin the process of gaining permanent residence. One of the… MORE

From The Blog:  Cooking to Serve Others
Prize-winning cake!
About this Cook
My husband and I have served as Evangelical missionaries in Spain for twelve years. After spending a fantastic year directing an international volunteer program in Toronto, Canada, we have recently relocated to Greenville, South Carolina. After 22 moves in 28 years I call no place my hometown. My roots are in Jesus Christ.
My favorite things to cook
I love Spanish food! Real Spanish, not Mexican, not Tex-Mex, but Spanish! I make a great paella, and my Tortilla EspaƱola almost always has 'muy buena pinta'.
My favorite family cooking traditions
I have picked up a lot of Spanish cooking traditions. But, Christmas Eve is always Norwegian Meatballs in Gravy with Lignonberries, mashed potatoes, and peas. I picked up recipes from my Norwegian aunt while growing up.
My cooking triumphs
In December 2003 I won an all-village baking contest in Spain for a Raspberry Cheesecake Brownie Pie!
My cooking tragedies
We once had friends over for dinner, and I mis-read a recipe for stuffed pork chops. They waited an extra hour before I was able to serve them! But at least it turned out!

Italian Style Turkey Meatloaf
This was a simple, yet tasty recipe. I made it just as the recipe is, only adding some dried minced onion. It was great! I'm sure I'll make it again. The family liked it too.

Tahini Chicken
This was a fantastic quick main dish! I didn't have fresh ginger, so I used ground. It still tasted great! I will definitely make this again! It went very well over basmati rice. And I served a green salad with it. My husband and daughter loved it too!

Creamy Crab and Pasta Salad
This is a very tasty salad! Of course I didn't have all the ingredients on hand, so had to substitute frozen peas and diced, fresh carrots, slightly cooked, for the peppers. But the dressing was very creamy. Those who found it dry the following day, should remember that most creamy dressings need additional ingredients after the pasta soaks up the initial dressing. I'll add some plain yogurt tomorrow. After reading some of the reviews, I decided to add three hard-boiled eggs, which made a good addition. I also used canned crab, rather than freshly cooked crab, and it seemed just fine. My husband and adult daughter loved this salad as much as I did. It's a great dish for a hot summer day! So I'll be sure to make it again.
