Why blog about cooking?

After living and serving churches in various regions of Spain for twelve years, and learning much about simple Mediterranean cooking, I am now back living in North America. My husband and I have relocated to Toronto, Ontario, to direct an international volunteer program. Our responsibilities include pastoral care for a wonderful group of eighteen young people who have given up a year of their lives to serve God in various ministries in and around Toronto.

Our young people, particularly those involved in urban ministry, are living on a very tight food budget, which can be workable, providing a little forethought is put into meal-planning before grocery shopping. I'm also considering two of my own kids who are living away at college, and may need a few pointers on menu- and meal-planning. 

While living in Spain, I learned much about the simplicity and earthiness of  the regional cuisine, especially some of their delectable stews. Combining my love for Spanish food and desire to offer my volunteers an inexpensive vegetarian dish, I came up with a very popular stew that is full of Mediterranean flavor and that is very simple. Last week for a soup luncheon at my church, I brought a Spinach and Garbanzo Stew, which turned out to be quite delicious.

My favorite things to cook
I love Spanish food! Real Spanish, not Mexican, not Tex-Mex, but Spanish! I make a great paella, and my Tortilla EspaƱola almost always has 'muy buena pinta'.
My favorite family cooking traditions
I have picked up a lot of Spanish cooking traditions. But, Christmas Eve is always Norwegian Meatballs in Gravy with Lignonberries, mashed potatoes, and peas. I picked up recipes from my Norwegian aunt while growing up.
My cooking triumphs
In December 2003 I won an all-village baking contest in Spain for a Raspberry Cheesecake Brownie Pie!
My cooking tragedies
We once had friends over for dinner, and I mis-read a recipe for stuffed pork chops. They waited an extra hour before I was able to serve them! But at least it turned out!
