Grilled Chicken with Rosemary and Bacon

This is a great summer recipe - quick, fresh tasting and delicious too! I used thin chicken breasts so that the bacon and rosemary didn't get overdone. The rosemary flavor is very subtle, with the bacon flavor being stronger. It is an elegant dish that would be impressive for guests, but is simple enough to enjoy on a busy weeknight as well.

Delicious Artichoke Dip

This was very good, and a hit at my latest dinner gathering. I thought the consistency was too thin however. I prefer something with more of a cheesy texture, and less of a creamy, soupy texture. My guests didn't complain in any case

Cottage Cheese Chicken Enchiladas

This was simple and delicious too! I didn't want the hassle of rolling the tortillas, so I just quartered the tortillas and put half on the bottom, then half after the chicken layer. They were fabulous and I'll definitely make them again!

Flank Steak with Horseradish Sauce

Deeeeelish! The only change I made to this recipe was to use a beef tenderloin in place of the flank steak. It is what I needed to use up. I loved the creamy horseradish sauce! Sometimes I find that horseradish seasonings don't have much horseradish flavor. This was not the case here. It was perfect! The marinade was just right as well. It just enhanced the flavor of the meat without overpowering it. On top of that, it looked great too!

Fish Chowder I

This is a very simple, tasty recipe. I used flounder instead of haddock and it would be good with most any fish. I also used cream in place of the milk, and it had a delicious, rich flavor.

Hasselback Potatoes

Red Raspberry Vinaigrette

I served this dressing with the salad Linda suggested, minus the bacon, and it was delicious. The dressing is SO easy, and is better than anything store bought. I made a salad for 2, so I cut the recipe to 1/4, and that worked perfectly. Thanks Linda!

Peanut Butter Cup Brownies

These were so yummy! I did find that I had to cut the time I baked them down to about 23 minutes. Also, using foil muffin liners made them come out easily. Otherwise, the paper pulled off half the brownie. I froze the peanut butter cups before putting them in the batter. I'll be making these again soon!

Italian Chicken with Pesto Potatoes

We really enjoyed this recipe. I made a few minor changes. First of all, I pounded the chicken flat, placed a slice of cheese inside the chicken breast, then rolled it up and wrapped it with proscuitto - couldn't find parma ham. Next, I thought the reduced balsamic vinegar sounded like a very strong flavor, so we just drizzled UNreduced balsamic vinegar over the chicken. It was delicious! I also cooked the potatoes in the microwave rather than boiling them. I didn't really change the ingredients, just the process to make it simpler.

Maria's Cucumber Salad

I loved the fresh flavor of this salad. I had some cucumbers I wanted to make, but didn't want a salad with mayonnaise or sour cream. I was excited to find this, and hopeful due to the other hesitant reviewers who were pleasantly surprised. Add me as a fan of this salad! It was perfect for a warm summer evening.

Marinated Chicken Kabobs

This was very good and easy to throw together. I was expecting more of a sweet flavor from the Karo syrup, but it was just a very subtle sweet flavor. I also cut the recipe in half and I had plenty of marinade for 4 chicken breast halves.

Ice Cream Snowball Pie

This was a delicious pie. Don't make the same mistake I did however. I made the crust ahead and froze it too long. When it was time to slice it, the crust was difficult to cut through. If I make it ahead again, I'll set it out to thaw slightly then fill with ice cream. YUM!

Chex® Pumpkin Pie Crunch

I have been trying a different Chex Mix each week, and so far, this is a favorite. I sent a batch up with my daughter while she was watching tv and she gave me an empty bag back. This is a nice option to the traditional Chex Mix. Great flavor - just the right sweetness.

Peanut Butter Pancakes

I've been making this for a few years and my daughter LOVES it. I substitute skim milk and a little powdered sugar for the evaporated milk. Then I usually have all the ingredients to make it whenever she asks for it.

Quick and Easy Vegetable Soup

This was very good - just the right amount of spiciness. I used cajun seasoning instead of creole, since that is what I had. I also used frozen green beans, and threw in a little frozen ocra. It's a very flexible recipe. Used vegetable broth to make it vegetarian.

Chocolate Coffee Toffee Chex® Mix

MMMMMM! This is good stuff! The only trouble I had was getting the powdered sugar to evenly coat the mix. I solved my problem by alternating powdered sugar with the mix, then shaking it to coat. This is definitely going to be a new favorite!
