Parmesan Baked Potatoes

These were really good! The only thing I did differently was to dip the cut side in butter then put them cut side UP, rather than cut side down. Then I sprinkled the potatoes with the parmesan cheese. I don't understand putting the cheese on the baking dish rather than the potatoes.

Basil Butter

Fabulous! What a fun recipe - so versatile, both in the way you can vary the ingredients as well as they different ways to use it. I may try omitting the lemon juice next time. I forgot to add the lemon juice. After I realized, and did add it, but I thought it sort of detracted from the basil flavor.

Fiesta Cheese Rice

This was very good. I am not a fan of Spanish rice, so this does make a nice side dish with a Mexican meal. I did use cooked rice, as I don't care for instant. After adding the other ingredients, I microwaved it as I was short on time. This will be a new regular on my schedule! Thanks!

Zippy Summer Shrimp

Can't count the number of times my husband told me how good this was. It was spicy enough to suit him, but not too hot for me to enjoy as well. I used the full amount of spices and it was perfect. It goes together very quickly too. Will definitely be one of our regulars!

Chicken Fajita Melts

Delicious! My husband was skeptical when I served these, saying he would prefer to have the filling inside a tortilla. After one taste, he changed his mind. The "melt" is a nice change. It was well liked by all! I followed the recipe exactly, except used 3 fairly large chicken breast halves. Look forward to serving this again.

Spicy Cilantro Dressing

Yum! Cut the recipe in half, using one fairly large jalapeno. It had just the right amount of kick. Using with a salad but can think of many uses for it - anyplace you would use sour cream on a Mexican dish.

Shrimp, Broccoli, and Sun-dried Tomatoes Scampi with Angel Hair

Very good! I used Jumaha's suggestions - stir frying the broccoli with the tomatoes, adding more garlic, using half the butter and adding some white wine. It went together quickly when I had all ingredients ready to go and was well liked by all.

One Bowl Chocolate Cake III

This is a delicious and easy cake. My daughter made it for her teacher's birthday, and to share with the class. I got distracted while it was baking, and it got overcooked. Still, it got rave reviews and I'll definitely make it again. I used a vanilla buttercream frosting because I ran out of cocoa. Next time the frosting will be chocolate too.

Feta Cheese and Bacon Stuffed Breasts

Very good! Just brushed the chicken with the oil mixture, as we thought it would be too oily if we poured it all over the chicken. May have used about half the marinade for 6 small breast halves and that was fine. The chicken was nice and tender and perfectly flavorful. Will make this again!

Grilled Salmon with Habanero-Lime Butter

This was very good. I used jalapeno, instead of habanero, because I was afraid it would be too hot. Next time I would use the habanero, as the jalapeno was flavorful, but had no heat. I would also make sure to use a thicker salmon fillet next time. Mine were too thin and dried out a bit during cooking. The butter would be great on other things - I'm thinking cornbread!! Great recipe!

Blueberry Crumb Bars

I sure love these delicious bars! It tastes like a slice of blueberry jam pie, with extra blueberry flavor and a nice crunch on top! I couldn't wait until they were completely cool to have a bite. I think they would be good warm with whipped cream or ice cream too. I will definitely make these again! I used frozen blueberries with great success!

Lemon Horseradish New Potatoes

This was good, but it didn't give the horseradish flavor I was expecting. I still liked it, but would have liked more "bite" to the horseradish. I guess cooking the horseradish mellows it.

Addictive Sweet Potato Burritos

I have had this recipe in my recipe box for almost 9 year, but I finally took the opportunity to try it. I only wish I'd tried it years ago! It was so good, even my daughter who doesn't like vegetables asked for more. The salsa and sour cream blended deliciously with the sweetness of the sweet potatoes, and the recipe was very easy. I'm so glad I finally gave this recipe a try!

Spinach Enchiladas Verde

Yum! This was even more delicious than I had hoped it would be. I bought a medium salsa verde that was just right. I used baby spinach and didn't slice it - just stacked it up. I also used other reviewers suggestion to just layer the tortillas. I tore them in half or in fourths to cover the baking dish, and made two layers of all ingredients. I also used a Mexican blend of cheeses for simplicity's sake. Fantastic recipe in every way!

Simple Ranchy Breaded Fish Fillets

I really liked this recipe, though I took other reviewer's advice to go easy on the ranch mix. I used about half the required amount, but next time I would use the full amount to give it more flavor. It was nicely crispy and quick to get on the table.
