Cajun Pasta Fresca

I liked this dish even more than I expected to! I have tried similar recipes, as they look good and healthy to me. Often though, we don't like them as much as we expected to. This recipe was different. Most of all, I liked the way that the cheese coated the pasta. Other times I seem to end up with clumps of cheese and other parts of the dish with no cheese. This was wonderfully creamy. I also really liked the kick from the creole seasining. I made my own and it was perfect! The only change I made was to cut the salt added to the tomatoes to about 1 teaspoon. We didn't miss the extra salt at all with all the flavor from the tomatoes and creole seasoning. Thanks for sharing this delicious recipe!

Chicken Avocado Salad

Delicious salad. Sherri's photo inspired me. I added some sliced tomato and served it over some Spring Mix Greens. It was easy and so yummy!

Salmon with Brown Sugar Glaze

I couldn't decide between 4 or 5 stars, but due to its simplicity, I gave it 5 stars. Next time I will try some of the additions other reviewers have suggested. I really did love how quick it is - no marinating time and broiling is a snap. Thanks for sharing!

Marrakesh Vegetable Curry

This was good, but I guess I expected more with all the five star reviews. I thought it was good, but not my favorite of the curries I have made. Maybe that is just our personal preference, as I didn't find anything wrong with the recipe. Perhaps the flavor combo isn't our thing. If you chop everything ahead, it goes together very quickly. I served this with Israeli couscous.

Buttermilk Cinnamon Bread

Delicious, simple recipe that can be made in 5 - 10 minutes, then baked. Enjoy the lovely smell coming from the kitchen too! I took this to serve to a group and didn't come back with a crumb!

Hungarian Mushroom Soup

I made this for my vegetarian daughter to take in her lunch. It was so good, she didn't get to take it in her lunch for long. I helped eat it all up! I just replaced the chicken broth with vegetable broth. It was fabulous and we loved it!

Mexican Pesto

We really enjoyed this as a topping for Barramundi. I just dredged the fillets in flour and seasoned salt, then pan fried them until they were golden and flaky. Added this fabulous pesto to make a delicious dish! I made this ahead and it was still good. I think the flavor might have been stronger if I hadn't waited to use it, but it was still wonderful and a nice change from basil based pesto. Thanks for sharing!

Green Sauce Enchiladas

We all thought these were fabulous! I took some suggestions from previous reviewers and marinated the chicken in lime juice, tequila, chile powder, cumin, garlic and diced jalapenos. I used only one large chicken breast half. I diced it up and then cooked it in a skillet until it was done. I used about 8 ounces of monterey jack cheese in the rice mixture, and another 2 on top. I also used 3 10 ounce cans of green enchilada sauce. I only used about half the filling, so I will freeze it and we will enjoy this meal again in the near future! Thanks for sharing!

Oaxacan Tacos

Yum! Really enjoyed these tacos and felt they were very authentic tasting. Next time I would grill the steak and slice into strips, as it was hard to avoid getting the steak overcooked. Nonetheless, it ws delicious. I used a jar of diced jalapeno rather than fresh. Offered both corn and flour tortillas and the corn tortillas were by far the favorite. I used less oil to warm the corn tortillas. They seemed to do well with just a bit of oil warmed until flexible. I then layered them between paper towels. Thanks for sharing this fabulous recipe!

Honey Mustard Chicken with Pretzel Crust

We enjoyed this very unique chicken recipe. Because some other reviewers mentioned that the mustards and pretzel flavors weren't real strong, I decided to use Honey Mustard Pretzel bits for half the pretzels, and regular pretzels for the other half. It was nice and crispy and very good. As it sat, the pretzels did get a little soggy, so be sure to eat this as soon as it is ready.

Buffalo Style Chicken Pizza

Yum! Used fat free ranch dressing - enough to cover lightly - and about 1 large diced chicken breast. Only about 4 - 6 ounces cheese too and it was delicious! Will definitely be enjoying this frequently!

Chocolate Coffee Toffee Chex® Mix

MMMMMM! This is good stuff! The only trouble I had was getting the powdered sugar to evenly coat the mix. I solved my problem by alternating powdered sugar with the mix, then shaking it to coat. This is definitely going to be a new favorite!

Chex® Pumpkin Pie Crunch

I have been trying a different Chex Mix each week, and so far, this is a favorite. I sent a batch up with my daughter while she was watching tv and she gave me an empty bag back. This is a nice option to the traditional Chex Mix. Great flavor - just the right sweetness.

Buffalo Chex® Mix

This was good, but not one of our favorite Chex Mix recipes. The buffalo flavor is about right for us, but the Wheat Chex were a little chewy, not crispy like I think they should be. I will stick with some of the other Chex Mix recipes.

Black Bean Spinach Pizza

I figured I would like this from the reviews, but my family was surprised at how good this was. I toned down the heat a bit, just dropping small amounts of salsa verde around the pizza - nowhere near 1/2 c. I also omitted the hot pepper sauce. It was just a bit spicy, but it was delicious anyway! Thanks for sharing!

Basil Butter

Fabulous! What a fun recipe - so versatile, both in the way you can vary the ingredients as well as they different ways to use it. I may try omitting the lemon juice next time. I forgot to add the lemon juice. After I realized, and did add it, but I thought it sort of detracted from the basil flavor.

Moe's Fabulous Mashed Potatoes

Mmmmmm...delish! These were fabulous. I substituted cream for the whole milk, and only used about 1 T butter. Did not use the nutmeg, but put about 1 1/2 t kosher salt in along with a generous sprinkling of white pepper. I didn't peel the potatoes because I'm lazy and also like them that way. They were the most delicious potatoes I've ever had!

Corn Dog Casserole

Really enjoyed this recipe! My daughter loves corn dogs, so I thought I would give this a try. I followed other reviewers suggestions to omit the celery and onion, as well as the sage. I added a couple tablespoons of honey to sweeten the cornbread. It turned out great! Thanks for sharing!

Peppy's Pita Bread

Excellent, and so much easier than I had expected it to be. This recipe has been sitting in my recipe box for YEARS and I finally decided to give it a try. I have been missing out for so long! I should have tried it ages ago! My kids oohed and ahhhed and they think I'm amazing. Next time I will add more garlic. I added some garlic powder, but would have liked more garlic flavor.
