Chocolate Chip Oatmeal Muffins

I put cinnamon chips in these muffins in place of the chocolate chips. They were wonderful - just sweet enough, and a bit healthier than your average muffin. My daughter took these on a beach trip and they were a hit.

Asparagus, Chicken, and Pecan Pasta

This is a great, fresh tasting pasta recipe. It is especially nice in that it goes together quickly if you do a little chopping ahead. I forgot to add the pecans. Will add those when we eat the leftovers.

Linda's Blue Cheese Dressing

I used this dressing to make Buffalo Chicken Paninis. I realized I was out of worcestershire sauce so substituted red wine vinegar and a dash of fish sauce. It was delicious and thickened up nicely after sitting for a while in the refrigerator. I cut the recipe down to 1/4 and will keep a batch of this in the refrigerator from now on.

Marzetti® Buffalo Blue Cheese Chicken Panini

Love these! These might be the best paninis I have ever made! Just the right amount of heat - crispy on the outside - flavorful - perfect! I made my own blue cheese dressing but otherwise made exactly like the recipe and can't wait to make again!

Cheesy Sweet and Savory Spuds

We really enjoyed these mashed potatoes. They are a nice change from traditional mashed potatoes and were very well received by all. I think you could omit the cream if needed. I didn't mash them to the point of being smooth - I thought the chunky texture was wonderful. Thanks for sharing!

Potato and Bean Enchiladas

YUMMY! I incorporated ideas from several other reviews. I added a can of red enchilada sauce to the filling, used a jar of salsa verde instead of making my own, and made it into a casserole when I was having trouble rolling the enchiladas. It turned out magnificently and I will definitely be making this again soon!

Radish Revival

This recipe is a good one depending on the radish you use. It sounded great, but the radishes I ended up this time were quite spicy without any seasoning. The ground peppercorns proved a bit too much this time. Next time we have radishes that aren't quite so flavorful, I will definitely pull this out again!

Focaccia Bread

I used the bread machine to make this foccacia. It was really easy and turned out fabulously. I used the foccaccia to make Grilled Vegetable sandwiches. The bread was perfect! I can't wait to use the bread in other ways soon.

Grilled Mediterranean Vegetable Sandwich

I expected this to be more time consuming from some of the other reviewers comments, but it went together pretty quickly. It was really yummy as well - we especially liked the garlic mayonnaise. I just added some minced garlic from a jar to the mayonnaise. Fresh garlic would be more pungent and I might try that next time. I will definitely be making this again!

Cheese Ravioli with Fresh Tomato and Artichoke Sauce

Very good and easy as well. I added a bit of tomato sauce and a few extra artichoke hearts as well. The tomato sauce gave the sauce a little body, which I thought improved it a bit. Great recipe!

Maria's Cucumber Salad

I loved the fresh flavor of this salad. I had some cucumbers I wanted to make, but didn't want a salad with mayonnaise or sour cream. I was excited to find this, and hopeful due to the other hesitant reviewers who were pleasantly surprised. Add me as a fan of this salad! It was perfect for a warm summer evening.

Poppy Seed Dressing II

This is an easy and delicious dressing. I cut the recipe down to 1/4. I also subbed onion powder (about 1/4 t for my small recipe) and it turned out fabulously. It is pretty sweet, but was a nice touch to a spinach salad with fruit, nuts and cheese.

Super Seven Spinach Salad

This was so easy to make and was absolutely fantastic! I sometimes forget what a great payoff I get when I put a little time into a salad. This is one of those salads - definitely one of the best I've made. I left out the onion, but otherwise made it according to the recipe. I will be making this again often!

Estrellita Salad

We loved this salad. I made it pretty much like the recipe with a couple exceptions made solely on the basis of personal preference. Omitted green pepper because I don't like it. Omitted cheese because I didn't think it would add to the taste and thought I would save the fat/calories in this case. If I had used it I was thinking I might cube it rather than use shredded cheese. I also substituted the catalina dressing with a basic vinaigrette. I didn't have catalina dressing and the vinaigrette sounded so fresh tasting. Loved the fritos. I thought about adding tortilla chips but the fritos made the salad in my opinion. Even though I varied the recipe, I think it is an all-star recipe. I do hope to try catalina dressing at some point. I almost forgot - when I read the recipe I thought it had a can of black beans in it. Even though it didn't, I added them anyway and would definitely do so again! Thanks for sharing!

Angel Hair Pasta with Garlic Shrimp and Broccoli

Delicious meal! I used fresh broccoli in place of frozen, but otherwise followed the recipe exactly. The cream sauce was creamy, but not too rich and oily to enjoy. The flavors all blended wonderfully! We all enjoyed this recipe.

Grilled Chicken with Rosemary and Bacon

This is a great summer recipe - quick, fresh tasting and delicious too! I used thin chicken breasts so that the bacon and rosemary didn't get overdone. The rosemary flavor is very subtle, with the bacon flavor being stronger. It is an elegant dish that would be impressive for guests, but is simple enough to enjoy on a busy weeknight as well.

Jalapeno Popper Grilled Cheese Sandwich

Sooo yummy! This really did reamind us of a jalapeno popper. I used some chopped jalapenos out of a jar, and that made the cream cheese soft enough that I omitted the sour cream (also used reduced fat cream cheese which is already softer). Maybe because of this, the crushed tortilla chips weren't crunchy. Next time I will just omit them because the sandwich was already incredible!
