Baked Potato Pizza

Slow Cooker Guisado Verde

I loved this, even though I was a little confused about the addition of the water. I used salsa verde in place of the tomatillos, etc... I added the water to the crock pot, which covered the pork shoulder but really dilluted the salsa verde mixture. It was very tender and tasted good. It just didn't have much of the salsa verde flavor. I used it to make quesadillas, and could add more salsa verde at that point. Don't know if I did something wrong, but it worked out OK for me.

Cauliflower Romaine Salad

This was a good salad and a nice change from usual salads. I loved the grated cauliflower and the toasted bread crumbs. I wasn't crazy about the dressing. It was too heavy for me. Next time I would thin it with milk. Thanks for sharing!

Strawberry Oatmeal Breakfast Smoothie

Wow! Who would have thought adding oats to a smoothie could make it so rich and creamy! I even snuck this past my picky eater. She drank the whole thing without realizing what a healthy thing she was eating. I used skim milk in place of soy milk and increased the sugar to about 1 T. It was fabulous!

Quinoa and Black Beans

Deeeelish! This is fabulous and my whole family enjoyed it. I used about 1/2 t cayenne and used canned corn and one can of black beans, but otherwise followed the recipe. It was just right. No way it served 10 at my house though. 4 of us eating it as a main dish polished it off.

Rosemary Parmesan Salmon

Very nice, delicately flavored salmon recipe. This is easy to make and is on the table quickly. I used deli-style shredded parmesan cheese and I do think the grated (as the recipe calls for) stuff in the green bottle would work better. The cheese I used melted, then cooled making the topping a solid piece on top of the fish. When we cut into the bread crumb and cheese topping, it kind of pulled off all together. Using the grated cheese would prevent that. The flavor though, was unbeatable. I will try it again soon!

Diana's Hawaiian Bread Rolls

These didn't taste quite like the hawaiian rolls I get at the store, but they are amazingly good! The store bought ones are just a tad sweeter. Nonetheless, my family loved them! I made them into 12 rolls, and they were great for sandwiches. I did omit the lemon extract - all the reviews scared me! Fabulous recipe!

Warm Shrimp Salad

Very good! I liked the simplicity of cooking the shrimp - just butter and lemon juice - so it comes together quickly. The warm shrimp contrasted nicely with the cool salad. We were about half way through dinner when we lost our power during Hurricane Irene. This will be one of those meals we won't forget! We'll definitely be enjoying it again soon, but hopefully under more peaceful circumstances.

Clam Sauce with Linguine

We really enjoyed this easy pasta recipe. I used a couple suggestions from previous reviews and the results were perfect! I added some cornstarch to a bit of the clam juice, warmed up, then added it to the clam mixture to thicken the sauce. I also added a splash of white wine. I think it would have been fabulous even without these minor additions, but it was delicious either way! I did up the noodles to about 1 1/4 lbs to use up what was in my pantry.

Oatmeal Peanut Butter Cookies

Yummy! I made these exactly like the recipe and they turned out perfect - just the right combination of crumbly and moist. I got about 36 cookies, so I guess I made them a little bit larger than some. Thanks for sharing!

Mediterranean Wrap

I thought this was very tasty, as did my vegetarian daughter. Hubby and other daughter were not pleased with this - they missed the meat here when ordinarily that isn't the case and they eat vegetarian meals happily. Maybe next time I will add some chicken to theirs to make everyone happy. I was pleased that the chopping and slicing was much easier than I had envisioned it being. The pesto and the goat cheese also gave it a great texture and flavor.

Garlic and Onion Boiled Peanuts

My family loves boiled peanuts, but unfortunately, we live a little too far North to enjoy them very often. This recipe brings the South a little closer to us! The onions and garlic in this recipe make them less salty, but just as flavorful as the traditional boiled peanuts we have had. They were delicious! They are not difficult, just a bit time consuming. I do suggest a good rinse before eating. The garlic and onion boil down to little bits that make eating them even messier. Just rinse them while they are draining in the collander and then enjoy! For those who haven't had boiled peanuts, they have a texture similar to a bean - which isn't surprising as they are part of the legume family. They just aren't quite as soft as a cooked bean. Try them, they are addictive!

Jan's Pretzel Dogs

What a great treat this is! Mine didn't turn out quite as pretty as the picture, but they sure were delicious! I made only half a recipe of the pretzel dogs, so had some leftover dough. I have frozen it and look forward to using it soon - either to make more pretzel dogs, or to make a small pizza. Mine did get a little too brown. Next time I will check them at about 10 minutes.

Mississippi Caviar

Mmmmmm - this is addictive stuff! I used plain petite diced tomatoes but upped the jalapenos a bit - also used the pre-chopped stuff that comes in a jar. I didn't add any additional tomato and thought that worked fine. My avocado didn't ripen on time, so I only got to have the leftovers with avocado. Fabulous stuff! I like it because it's a great appetizer, but you don't just eat it mindlessly because of its kick.

Can't Leave Alone Bars

I used a German Chocolate cake mix and mint chocolate chips. I LOVED these bars with the gooey chocolate layer. They were different and so delicious! I wasn't sure the chocolate layer was going to set up, but it turned out just fine. I baked them 25 minutes.

Risotto with Tomato, Corn and Basil

This gem of a recipe has been sitting in my recipe box for ten years! I could have been enjoying it for all this time. In any case, I am glad I took the opportunity to whip this up - it is amazing! I forgot to pick up fresh corn, so used canned sweet corn, and it was still sooooo yummy! I did use a fresh tomato and basil from the garden. It is creamy and delicous and not difficult to make! I'm thrilled to have discovered it!

Grilled Wonton Chicken Salad

Very good! I used chow mein noodles in place of fried wontons - mostly because it makes it simpler. The salad was wonderfully flavorful and a hit with the whole family. I did cut back both on the chicken and the dressing. Half a recipe of dressing was plenty, and we aren't big meat eaters so one monster chicken breast did it for us. Thanks for sharing!
