Oriental Vinaigrette

Really enjoyed this on a salad of lettuce, carrots, almond slices and chow mein noodles. Used only half the honey as I thought it might be too sweet for me. It turned out just right. Picky eater didn't like, but husband did.

Steak Salad (Ranen Salad)

We enjoyed this salad and thought the dressing was fabulous! Vinaigrette with a smoky touch - perfect. My husband didn't like the steak "cold", but the rest of us thought it was very good. I used feta for those who don't appreciate blue cheese.

Herb Biscuits

My family loved these! I used only half the butter called for and just drizzled it over the biscuits in the pan. They were plenty buttery!

Caprese on a Stick

A friend made these and they were impressive looking and quite good. She wished she had drizzled them with balsamic vinegar. I might also add some chunks of French bread.

Spicy Shrimp with Bang Bang Sauce

This is an excellent, healthier alternative to the Bang Bang Shrimp you find at restaurants. I made it exactly as directed and it was wonderful. I liked the oven bag for easy clean up but it did seem to take the shrimp longer to cook. I think it was because the shrimp were not flat in one layer in the bag and casserole. I will try to get them in one layer next time. It would also work well in a skillet.

Baked Teriyaki Chicken

Outstanding! We loved this - especially the sauce. It thickened up fabulously with baking and was so delicious when drizzled over the brown rice and broccoli. Love it!

Peanut Butter Chocolate Chip Cookies II

These are good cookies, but I found them to be a little temperamental about the time. I had to stick them back in the oven for a few minutes, but was afraid I would overcook them. They came out a little bit underdone for my taste, and I usually like my cookies a bit "doughy". I might also try regular sized chocolate chips. The mini chocolate chips sounded like a good idea, but I felt the chocolate flavor was kind of lost.

Ham and Hash Brown Quiche

I served this for dinner and it got rave reviews - my husband actually told me how good it was four times during the meal and my picky eater went back for seconds in spite of the red pepper and the onion! Will make this again for sure!

Melt-in-Your-Mouth Broiled Salmon

This was good and easy. I followed another reviewer's recommendation to bake it at 375. We didn't care for the mixture of spices and herbs - the worcestershire was especially strong to me - but it was good and we enjoyed it.

Delicious! I had to use regular sourdough bread because I dropped the ball on making the foccacia. It was delicious! Quick and easy but I ended up with fabulous results!

Pan-Seared Tilapia

This is so delicious for such a simple recipe! I made this when I didn't feel like spending a lot of time in the kitchen. Served with some couscous and steamed broccoli and it turned out like I'd slaved for a long time! Even got rave reviews from my husband - who generally likes things heavily spiced. This recipe was perfect with just the basics!

Bean Soup

Very good! This was my first time using my leftover ham bone from Christmas dinner and soaking the dried beans as well. I used great northern beans and it turned out fabulously! I would not add any salt next time as it was plenty salty due to the ham. Also used some Swason's Flavor Booster and that probably increased the saltiness as well.

Raspberry Chocolate Supremes

This gets 5 stars for taste, but I had a hard time with the layers. That being said, I am not very good at making things look pretty, so I shouldn't be surprised that mine looked like a mess. Both the cream cheese layer and the chocolate layer were difficult to spread out, and the jam oozed between the chocolate when I tried to smooth it. Nonetheless, it was very tasty. I thought I had raspberry jam, but it turned out to be cherry. Still good, though the cherries in the jam added to my troubles. Other people are very capable of making this look nice, as the photos prove. Just not me :)

Easy, Cheesy Tortellini Bake

Very quick and easy - and I even made my own alfredo sauce, using the Quick and Easy Alfredo Sauce - from this site. This makes a very large pan of tortellini. I think it would make 8 - 10 servings but I don't think it will last long!

Easy Mediterranean Fish

Had some tilapia one night and wanted to make something with it. Made a few substitutions, but didn't stray too far from the original recipe. Used canned tomatoes and ripe olives, and of course, Tilapia. I liked using the foil packet - it makes clean up such a snap. Very flavorful recipe, even using the substitutions I did. Thanks for sharing.
