Raspberry-Lemon Pie In a Toasted Coconut Crust

This has a lot of potential. The flavor is amazing but only 1 cup of sugar is plenty. I used 3 TBSP of corn starch and it still did not set up. The custard would make an amazing parfait layered with toasted coconut, raspberries and topped with coconut flavored whipped cream.

Creamy Shrimp Scampi

As written, this is pretty bland. Made it a second time and added WAY more garlic. That helped a lot.

Orange Blueberry Muffins

I tried adding additional zest as other reviewers suggested but still got only a subtle hint of orange flavor. These are moist muffins with a nice flavor - just not that orangy. I was also surprised at how thick the batter was. As an alternative to the topping, I used sparkling sugar - gave it just enough sweet and crunch without the nuts or spice.

Nutty Apple Crisp

The flavor of this is wonderful, but it the way it is written, there is too much "crisp" for the amount of apples. Next time I will either double the apples or half the "crisp".

Coconut-Cornflake Cookies

Definitely not what I was expecting. I cut back on the sugar and still way too sweet. I used parchment paper and the cookies stuck and came apart when I tried to remove them.

Yum! I left out the zest because I was out of lemons, but I think it really needs it to intensify the lemon flavor. Will definitely make again!

Overnight Blueberry French Toast

As written, this is only OK. I should have read all the reviews. There are way too many eggs for the size pan it calls for. I was not a fan of the cream cheese globs, either. Next time I'll follow the reviewers advice who spread the cream cheese on the bread before cubing. The blueberry sauce is fabulous, though! I'll try it again with some modifications, for sure.

Candy Coated Pecans

Flavor seems to be lacking. Bake for 35 minutes at 300 degrees, stirring every 10-15 minutes. If you have a teflon baking sheet, that eliminates the need for Pam and the nuts don't get soggy.

Lemon Garlic Tilapia

Flavor is excellent. Very easy for a weeknight dinner. Cooking time needs to be adjusted to the cut of fish you have, though. My filets were pretty thin and cooked completely in 15 minutes.

As posted, this was only OK. 30 minutes is way too long to bake - I'll try 15-20 next time. I also added other toppings and more cheese. A good place to start, though!

These are awesome - butterscotch chips definitely are a good twist on a great recipe. I tend to make my cookies a little larger, so I had to bake them for 12 minutes.

Braised Balsamic Chicken

I thought that the tomato mixture in the pot would be good to have over rice - but it dried up during the cooking process - the chicken was dry too. My hasband liked it, but I could take it or leave it.

Green Beans With Walnuts

I had to modify a bit - I used all butter as I didn't have any walnut oil. Turned out fine, though. Nice change from steamed green beans, although not as healthy with all the butter!

Shrimp Lemon Pepper Linguini

This was excellent! I went easy on the pepper as others had suggested, and it turned out perfect. Great base sauce...could be used with chicken and vegetables if you don't like shrimp.
