Gluten Free Danish

The only thing missing is the flaky texture that a glutenous danish would have; this one is a bit dense. Taste is great though!! Definitely a recipe worth playing around with!

Banana Pumpkin Bread

Yummy. I used very dark honey that was almost like molasses. I think it needed a little vanilla flavoring to deepen the taste a bit more, but I will definitely make this again. It did have to bake a lot longer than the recipe called for - maybe 20 more minutes- I just kept checking with a toothpick.

Alfredo Sauce

Was delicious. The texture was just a bit dry as I used parm, but my husband said he actually preferred it that way. We had it over leftover roast and veggies- I sliced the roast thin and layered it in a glass baking dish w/carrots and potatoes also sliced thin. I then poured the sauce over the top. A yummy way to use leftover roast! I would have added steamed broccoli and mushrooms if I had had them on hand.

Swiss Chard with Pinto Beans and Goat Cheese

I thought this was just okay. We make a warm white bean salad that is very similar to this but without a green (other than fresh parsley) and it's much better. I didn't like the texture of the chard... thought it was weird.

Oatmeal Chocolate Chip Muffins

Substituted virgin coconut oil for veg oil and added 1 tbs ground flax seeds to replace part of pecans. Also added 1 tsp of vanilla. Delicious!!!

Chicken Pot Pie IX

Modifications to recipe- unsweetened (plain) soymilk for the milk, multi-colored carrots for the regular carrots, eliminated the peas, added 1 tsp of greek seasoning, a few cloves of roasted garlic and replaced the celery seed and salt with celery salt. Also doubled the gravy for deepdish pie crust, but it came out WAYYY too much, so we ended up using enough to fill it up and had some gravy left over for potatoes.

Sugar Cookies

Followed the recipe and it was perfect. It made about 50 cookies. We baked them for 9 minutes and they didn't look done on the top, but were slightly golden on the bottom, so I went ahead and took them out of the oven and they were PERFECT. YUM. Crunchy on the outside and tender inside. Definitely a weird type of dough to work with though (and toughens after refrigerated overnight quite a lot) I would not recommend this one for using cookie cutters, but you might be able to modify it for that if you're a more experienced baker than I!

Butternut Squash Fries

I cubed mine and put it into a baggie with a drizzle of olive oil and a sprinkle of sugar and salt and smooshed it around until coated and then baked. My picky daughter and my carnivore husband both devoured them and asked for more. Will make again for sure! Also great with no seasonings for my 13 month old.

Peanut Brittle

Don't use a plastic spoon- it will melt. Also, mine did not get to the stage it was supposed to until it was already brown and smelled like burning! I salvaged a little and it tasted good, but what a MESS this was to make!!!
