Chef John's Grilled Jerk Pork Tenderloin

Sooooooo good. I used only 1 habanero, but next time I will use 2. I also used pork chops. Will make again and again!

Big Soft Ginger Cookies

I made these for my sister-in-law who has pregnancy induced hyperemesis because ginger is a natural antinausea spice. She loved them (and they didn't make her sick) and so did my husband and I. They were sugary and chewy. I flattened the balls and they came out looking perfect.

Mock Champagne

I made this for my friend's baby shower. The ice ring was way too big for my punch bowl. All the ingredients were already chilled so no ice ring was no big deal. I substituted sparkling grape juice for half of the white grape juice. The extra bubbles were fun and the sparkling grape juice isn't as sweet. All in all the "champagne" was a hit.

Goat Cheese Salmon

I made this for my husband and I tonight. I enjoyed the fish, but it was slightly too rich. I would use less goat cheese next time even though I am a goat cheese freak. I also found it a a little too salty. Next time I will not pre-salt. I used another reviewer's suggestion and baked the fish for 15 minutes at 350 and then broiled it for 2 minutes. It browned nicely. Overall, I would make this again.

Banana Crumb Muffins

These muffins are so moist. They come out more cupcake like than muffin like which makes them irresistible. My mom was very impressed when I made these for breakfast for her.

Golden Rum Cake

I loved this recipe! The cake came out moist and very rummy. I added an extra 1 tsp rum extract and 1 tsp butter extract. I used Barcardi Gold rum as well. I have also made the cake with chocolate cake mix. The chocolate and rum together are wonderful.
