Italian Sausage Soup with Tortellini

I wish I could give this 10 stars! This was absolutely wonderful...I did make a few changes to the original recipe but I just *have* to do that to everything I cook! I added extra carrots and I added a handful of fresh spinach because I ahd some in the house. I too used the canned diced tomatoes which worked fine. I had no beef broth in the house so I used chicken broth and the soup was still good. I wish I had more leftovers...there is only one small bowl left and I have hid it in the back of the fridge because I don't want to share it!!! DELICIOUS!

Pita Chips

These were really good!! Played around with the seasonings a bit (didn't have chevril) and I split them in half so I cut the cooking time a little so they didn't burn...got raves from everyone! No one could believe they weren't store bought! I think they are better! No need to spend a mint on Pita chips ever again...thanks for an awesome recipe!

Bourbon Pecan Chicken

This was so good! It was definitely a restaurant type dish. I pounded my chicken breasts really thin for quicker cooking, used a little extra bourbon, less butter in the sauce, and fried in a mix of oil/butter rather than the clarified butter just a little quicker I think. DELICIOUS! and definitelty worth it!

Crispy Coconut Chicken Fingers

Sicilian Brasciole a la Lena

My grandmother made brasciole every Sunday with her "gravy", tomato sauce to most people... Brasciole can be made with pork, veal or beef but the key is whichever meat you use it has to be extremely thin otherwise it will be difficult to roll and may not get as tender as it should. Brasciole is a versatile recipe as you can really play around with the stuffing ingredients, i.e different cheeses, capicola, my grandmother used to put hard boiled egg in hers (cheaper than pine nuts!!)

Italian Rice Balls

These are so good I could eat them every day!! This is a good basic recipe and you can add stuff to it like mozzerella, peas, ground beef whatever you like with no problem. It helps to use arborio rice because it's stickier and helps the balls stay together better.

Surprise South Beach Mashed 'Potatoes'

I absolutley love mashed potatoes. When I made this as written, I wanted to cry. I thought they must be joking if they think this is supposed to replace the real thing! But as others have said if you doctor up the seasonings, add some fat free cream cheese or sour cream, whatever...they do end up being really good! I have also found that making sure you let them really puree in the food processor makes them creamier too! Just experiment!!

This really was tasty! I made this for a friend on a low carb diet, so I left out the flour...she couldn't believe that this was "ok" on her diet because it tasted so good! will definitely make again!

Jewish Apple Cake II

This was very good!! I did add more apples as my apples were on the small side, I think I will add even more next time. I threw in some walnuts as others suggested as well. Everyone loved it...It was so delicious it didn't even last the weekend!!!!

Mini Meatloaves

These were really good and so easy to make! I didn't have any oats so I crushed up some cheddar cheese crackers instead, and added a little more seasoning to the meat mixture. My husband and four year old raved about them, and they are a tough crowd! Delicious!

Quick Chicken Soup

This was really good and sooo easy to make! I had some leftover roasted chicken that I wanted to use up so I just threw that in instead of the boneless breasts. I also added an extra can of broth, a handful of spinach and about a half a cup of ditalini pasta. My husband thought I had been cooking this all day!

Cathy's Banana Bread

My family loved this banana bread! I followed some other reviewers suggestions and added cinnamon and a little bit of nutmeg. I also added some walnuts and chocolate chips. Didn't last too long in my house! It was just delicious!

Greek Salad I

I loved this salad! I followed others suggestions and cut back on the oil and added a splash of red wine vinegar. The dressing still seemed to be missing "something" so when I had the leftovers the next day, I added a little bit of garlic powder and that did the trick!!

Moroccan Chicken with Olives

I really enjoyed this dish, my husband did not care for it as he is not a very "adventurous" eater! I added a little extra lemon juice and used an assortment of olives such as kalamata, amfissa, and sicilian. Very delicious.

Rhinelander Lentil Soup
