Slow Cooker Beef Stew I

I just made this tonight. I was very skeptical about the meat being tender. I'm only used to flouring and then browning the pieces before cooking. I will NEVER have to do that again. It was soooo good! I let it cook on low for about 10 hours. I did thicken a little with cornstarch slurry. It was just sooo good and easy.

Slow Cooker Chicken and Dumplings

I just made this for the second time tonight. Going on instinct, I made some changes. I only have a round crock, so I used two (but large) chicken breasts. I think they totaled 1.5 lbs. I halved the rest of the ingredients, except the onion. I used heart smart cream of chicken soup, two large, chopped carrots, two chopped celery stalks, a generous tablespoon of Italian seasoning, and about a tsp. of garlic powder...salt and pepper to taste (add at the end). It really NEEDS this extra seasoning. I tear of the bictuits and add to the pot and let cook another 1 or 1.5 hours. (PS I'm doing all this on low). I noticed the biscuits blob together over the top, but I just take scissors and snip them apart. I really like the comforting taste of this dish. It's even better the next day.

Moist Chocolate Muffins

I really liked this recipe. It's sooo easy. However, I am always in search of making my chocolate cupcakes, cakes or muffins more INTENSELY chocolate. Is there a trick? Something I should be adding? Don't get me wrong, these were good. It was an easy thing to whip up that my three year old can help with and everyone enjoys them. I only had vanilla low fat yogurt and it tasted great. Nice spongy texture and the tops were a bit crisp. I'm happy.

Smoked Gouda Mac and Cheese

Just made this today. We loved it. I have to admit I am not a measurer, but essentially do follow the recommendations. I used smoked gouda and some raclette cheese (french melting cheese) which is mild and adds a lot of creaminess. I also tossed in cream cheese, about 4 oz. Here's where I made this AWESOME - I added some crisp bacon to the top. OMG! This was good, I felt like I needed a cigarette afterwards.

Delicious Raspberry Oatmeal Cookie Bars

OKay - made these last week with apple butter and a little vanilla. They were GREAT and super breakfasty. This week, I made a double batch with apricot butter (basically natural apricot preserves, but not super sweet). The kicker - I added hazelnut extract to the crumble part. Holy ! The hazelnut with the apricot is soooo good! Must - stay - away - from pan! These are so easy to prepare and something to enjoy with your afternoon coffee!

Mound Bars

I love these. I wanted to bake but had no flour? Crazy. These bars are very decadent - like eating a candy bar. I didn't mix the coconut with the condensed milk. I did what other suggested and just put the coconut on and then poured the milk over it and baked. It all melds in the oven. For the chocolate chips - I poured them on and popped the pan back in the oven for a minute or two and then spread the chocolate with a knife. I think next time I'm going to use milk chocolate instead of semi sweet. These are really good and really hit the spot for an afternoon sweet treat!

Brown Sugar Banana Nut Bread I

I just made this last night. First, I have a 3.5 month old so I need something fast so he can just hang and watch me and not get bored. This bread is soooo good. I believe it's the brown sugar. With other recipes, I've had issues with a spongy texture, not here. It is very muffin-like, but moist and sweet, but not overly. I sprinkled some plain ole brown sugar on top with a dusting of cinnamon. OMG! I will totally make this again. Sadly, I've eaten almost have the cake myself.

Alyson's Broccoli Salad

This was SOOO good. I always used to treat myself with the one from the deli counter. This is WAY better, especially because I see what goes into it. Even my husband loved it and he always gafaws at raisins. This disappears at every BBQ. FYI: Use your judgement as to the amount of broccoli. Heads of broccoli vary in size. I adjust all ingredients accordingly. Trust your taste buds! That's what cooking is about. ENJOY!

Baked Beef Stew

I just made this tonight. It was REALLY good and really filling. I have to say that I had over 3lbs of meat so I had to use two corningware dishes. However, I seasoned flour and browned the meat in batches before combining it with the veggies. I deglazed the brown bits with beef stock. I actually had to use a box of beef broth and two cans of diced tomatoes but I did use a lot of carrots, etc. to balance the amound of beef I used. I baked everything for almost three hours. After removing it from the oven I added the corn starch slurry and it thickened even more. Very delicious!

Brown Sugar Brownies

1 change - bake in small square pan. I have no idea how this would fit in a 9x13!! I love this recipe because it makes a small batch for the 2 of us. I prefer them with walnuts and no choc chips. It's so easy when you just want something sweet. It's so simple too! I make this like twice a month.

The Best Lemon Bars

After I couldn't find my old reliable lemon bar recipe I searched allrecipes for what looked most similar. This recipe is by far the standard for what a lemon bar should be. It's no muss, no fuss ingredients and simple preparating make it basically no fail. Highly recommended for a dessert table extra or the main feature for an afternoon of tea and sweets.

Cheese-Stuffed Jalapenos

I just made these last night for New Year's. WOW! SOOOO Good! I mixed a packet of ranch dressing with the cream cheese and only had fresh bacon bits off the shelf and it was so delicious. I could have eaten the whole pan myself. This recipe is also good because it's easy to prepare ahead, perhaps a few hours ahead, and pop them in the oven when you're ready.

Caramel Bars

WOW! Couldn't stop eating them. I highly recommend using a 9x9 pan for this recipe unless you double it. The cookies are deliciously rich and they can be cut into small squares. I am making them for thanksgiving!

Creamy Blueberry Pie

I LOVED this pie. During blueberry season you can't miss with this one. I only ever use frozen pie crust (I'm lazy) and it was SOOOO good. I agree with the following comments from others: 1. Add vanilla to the sour cream 2. Add pinch of cinnamon to the topping 3. Almost tastes better the next day cold or room temp. My next variation on this pie will to make it with strawberries or a mixed berry. Try Trader Joe's frozen berries.
