Macaroni Pie

This is the same recipe we've used forever. However, I did cut back on the amount of macaroni...32 oz. is waaay too many noodles; using 16 oz. is better, still get good results with 8 oz. and cut back on milk to 2 cups and eggs to 2 and you still get a good sized casserole. We like the top crusty, so I always add extra cheese on top. Also use sharp or extra sharp cheese for more flavor.

Yummy Candied Yams

These are so delicious; I will never used canned yams again...added a bit of cinnamon and nutmeg; also, left potatoes in bigger chunks as another reviewer recommended. A real winner. Thanks!

Easy Fried Spinach

My family loves spinach this way; on occasion I have added bacon. Try after sauteing the garlic, turning off the heat and putting the spinach in the pan, covered, and let sit for a few minutes and it wilts perfectly without being overcooked. My kids ate it when they were small and I never had to doctor it or bribe them to eat their spinach; fresh spinach is the only way to go!

Chicken Breasts in Caper Cream Sauce

Delicious, simple, and served with garlic mashed potatoes or brown rice, it is real comfort food. The cream is what gives this dish the richness it deserves....regular milk with cornstarch? Yikes!!

Oven Pot Roast

After years of cooking our pot roast on the stove top or in slow cooker, I was able to be home all one day so I cooked it in the oven as this recipe says. OMIGOSH!!!The house smelled like pot roast heaven. My husband's nose was twitching when he came in from work,"What's for dinner that smells so good?" Don't know why, but cooking in the oven gave off aroma much more than slow cooker or stove top! Guess our mom's and grandmom's did know what they were doing!!

Chai Tea Mix

I made this and gave it for Christmas gifts this year, it was a huge hit. I added the note on the tag of instructions about adding 1t. nutmeg, allspice and 1/4 white pepper if they so desired. Will be a keeper in this household.

Easy Holiday Stuffing

I made our stuffing in the crock pot this last Thanksgiving for the first time...what a life saver. My recipe is a little different, using crumbled corn bread and adding a can of cream of mushroom soup (healthy request brand. So much less stress and saved room in the oven for other dishes and saved a lot of time as far as getting everything on the table hot at the same time. At one point I put the crock pot on high when I felt the middle wasn't cooking fast enough. I will do the stuffing this way every year from now on! Any stuffing recipe will work in the crock pot. Try it!

Tasty Green Bean Casserole

This is very good, I did make my own cream soup/sauce and added lightly sauteed chopped fresh mushrooms to the sauce. I also used fresh green beans, but frozen are fine too.

Moroccan Lentil Salad

I had this salad at a Morrocan themed meal at my book club gathering. It looked beautiful, but it didn't have much flavor...I'm wondering if the pepper was left out? I would try again, though. Don't want to give it a lower rating if something was substituted or left out. I don't think folks should give a low review when they change the recipe, which is something I've observed with some of the reviews on this site. Doesn't seem fair!

Dijon-Tarragon Cream Chicken

This recipe is so delicious and everyone I've served it to raves; I always double the sauce and it is just right. Yum Yum. Ya gotta try this one. A super easy, elegant company meal, too. It is also an "Adkins diet" low carb recipe, that is until you add the sauteeing in flour as some have done.

Clone of a Cinnabon

**Update 03/09/09: The frosting is to die for...**Made some again last week and son gave some to his girlfriend and her roommate..they were in shock at how good they were! Homemade is best, I'm telling ya!!** Best recipe and I've been making cinnamon rolls for years. Tried this one and it is definitely the best I've made. Bread machine's rock!!!

Healthy Turkey Loaf

I used 1 lb. of lean ground turkey and doubled the rest of the ingrediants. It took about 50 minutes to cook and I also added fresh basil leaves to the top of the loaf about 3/4 of the way through cooking and a some sliced roma tomatos at the same time, made it look good plus the fresh basil tasted good too. As recipe said, I added lemon pepper to taste and this loaf is healthy and tasty. A winner.

Broccoflower®, Cranberry and Almond Salad

This is a wonderful twist on broccoli salad. Stores are carrying the broccoflower more and more along with other variations of cauliflower. Beautiful to look at and quite tasty. (You can add crumbled bacon if you like, I do.

Microwave Peanut Brittle

This is a wonderful, easy recipe. No standing over a hot pot stirring and waiting for the right "stages"; this is my preferred way of making brittle; I have substituted a can of deluxe mixed nuts or almonds, or macadamias, or whatever nut you prefer. Folks think you slaved over it!!!

When you are pinched for time, try the "microwave peanut brittle" on this site....it is so easy, particularly when you are pressed for time. No standing over a hot pot...just in front of the microwave!!!
