Jimmy's Mexican Pizza

I did as others did and crisped up my tortillas in a skillet (or oven if you prefer) and it gave it more crunch similar to the Taco Bell version. Yummy, yummy

Quick Enchilada Sauce

Sorry...this is still like canned sauce. If you buy the mexican dried chiles (I use Anaheim or California ) soak them in hot water, then put in blender with your spices & beef broth then you have a quick, and DELICIOUS uncanned sauce.

Quinoa and Black Beans

Very, very good. Just a note, you never have to soak Quinoa...and the recipe doesn't call for it. It becomes like mush if you soak it; rinsing it off (if you buy in bulk it hasn't been rinsed) gets rid of any bitter taste. Some prepackaged quinoa has already been rinsed.

Beef Wellington

This is a great recipe; you can omit the pate and make your own spread with mushrooms, etc. I have done a similar recipe using a boneless pork loin (made individual servings) and encased in filo dough. Will dig out the recipe and post soon.

Ghirardelli Chocolate Brownies with Peppermint Bark

Once again, I have to say, when you change the recipe and it turns out bad, don't give the original a bad star rating...this goes to the person who substituted splenda and complained of the weird texture...of course! Splenda doesn't translate too every recipe. Otherwise, these were really good and different, using REAL sugar.

Magic Cookie Bars II

A fantastic classic. FYI: even if you use fat free sweetened condensed milk...you are still getting a boat load of sugar....which turns to fat as you process it anyway...so just enjoy this once in awhile, but DO NOT give them up! :o)

Delicious....but I would like to suggest to those taking photos of their dish....um, try to get a really good shot with a good camera, otherwise the picture can be really, really, unappetizing...like the one today 10/20/11....white pork. Ugh!

Chicken Florentine Casserole

I would never dream of using "canned" spinach...bleh. Used frozen chopped spinach instead and thawed and squeezed it dry. Fresh would be best too. Good recipe otherwise.

Golden Egg Bread

This is one of the most beautiful breads I've made in my bread maker. Fortunately, my machine has a loaf shaped pan so I didn't have to do dough rise only and switch to loaf pans. I used the 2lb. loaf setting, and it was perfect. Gorgeous golden loaf, slices well, and tomorrow, we will have French toast with it for breakfast! I have another loaf going right now!

Panko Crusted Mashed Potato Cakes

Dredging these in the Panko crumbs is a wonderful idea. I used just 1 egg, though, and that made for an easier mixture to handle. Will do it this way from now on.

Swedish Cream Wafers

Not sure why anyone would consider this a "rip off" from another recipe source?? I first had these 30 years ago when a co-worker brought them to work...they were delicious. I'm glad to see it here as I don't have a Betty Crocker cook book. They really melt in your mouth.

Alice Chicken

I have made another recipe on this site, "Aussie Chicken" and it is exactly like the Alice Springs Chicken served at that famous "outback" restaurant....this one is a bit different, but the other one tastes just like the menu item at the restaurant....this is a bit easier and almost as good.

Slow Cooker Italian Beef for Sandwiches

This is delicious, and does taste very much like the Italian beef sandwiches at a place in the suburbs of Chicago where my husband grew up. I didn't used the salad dressing, just bumped up the original spices a bit. I sliced up some green bell pepper and cooked it in the juices after removing the meat, only took about 5 min. to cook. We like it with the peppers. Also, I used beef broth in place of the water....then I took the rolls we were using, split them and set them in the toaster oven and hit "toast", just to firm up the bread so when we dipped them in the juice (ahhhh....) it didn't get soggy. Awesome.
