Pineapple Cheesecake Squares

This recipe is delicious! I made it the first time for a summer baby shower, and the light, fruity taste was a perfect treat in the hot weather! Everyone loved it, and there were only crumbs left behind.

Scottish Shortbread II

This recipe is delicious! The shortbread has a delicate, buttery texture that is divine! Since the recipe didn't say how long to bake it, I looked at a few other similar recipes and ended up baking it for 30 minutes. I also used a 9 inch, deep dish pie pan. It turned out perfectly! We topped it with ice cream and fresh strawberries from our garden!

Bodacious Broccoli Salad

The recipe for the dressing on this salad is outstanding, though I had to double it so that the salad would not be dry. As far as the salad itself goes, I made a couple of changes. I used turkey bacon rather than pork bacon and fresh squeezed orange juice because I didn't have a lemon. I also added 1/2 cup each of sunflower seeds and craisins. Everyone very much enjoyed it!

Chocolate Chip Oatmeal Cookies

This is actually the second time we have made this amazing recipe. It's like the childhood recipe I made in 4-H that was misplaced years ago. The first time, we followed the recipe exactly as written, and they were divine. This time, I realized I was out of all-purpose flour, so I used whole wheat flour instead. They turned out PERFECTLY! We couldn't tell the difference, and it made them a little bit healthier too! My kids were actually eating the batter right from the bowl, and the texture of the cookies turned out exactly the way we like them!

White Chocolate, Chocolate Cookies

I thought this recipe was okay. I took the suggestion of other reviewers, and I added a teaspoon of baking powder. The first batch I made had an extremely dry dough consistency, and was difficult to scoop and work with. Since I was making them for an event, I made a second batch and altered it by using a half cup less flour. They turned out better than the first batch. The texture of the cookies is a little powdery as well, and you can taste a strong cocoa powder flavor. Make sure you use your favorite cocoa powder since you will taste it. That's probably my favorite part of the cookie.

Slow Cooker Chicken Pot Pie Stew

This recipe was pretty good. I made a couple minor alterations. I eliminated the boullion to reduce the amount of MSG in the recipe and pressed two cloves of fresh garlic rather than using the garlic salt. Other than that, I followed the recipe exactly. Next time, I will cut the amount of celery salt in half and plan more time for cooking. It needed an extra hour of cooking time for the potatoes to be done, and I diced them smaller than was suggested. I also served this over homemade, buttermilk whole wheat biscuits. It was delicious together! I would recommend this on days when you have time to do a lot of kitchen prep early in the day as it took quite a while to dice the chicken and peel and dice the potatoes as well. It also makes a lot!!! This will easily feed my family of 4 twice this week. It's a great recipe for a busy week!

Cheese Herb Bread

This bread was delicious with a few adjustments. As others recommended, I reduced the amount of yeast by 1/3, and the bread still maxed out my machine. I'll use even less the next time. I used more parmesan cheese than was recommended and used fresh rosemary, Italian parsley and oregano from my garden. This was delicious served with fettucini alfredo.

PHILLY Brownie Cheesecake

This was delicious, but it had it's flaws. I baked it in a 10 inch spring form pan, as the one in the picture appears to have been. As far as flavor, it was perfect. The vanilla cheesecake was divine, and the chocolate brownie crust made it taste even better. However, I baked the brownie a few minutes longer than the recipe suggested, and it still ended up separating from the cheesecake and was completely mushy. I'm not sure how to conquer this problem, though I would like to figure it out because I love the idea of a brownie cheesecake, and this did taste great! I will probably try this again in the future after doing some research.

Hot Artichoke and Spinach Dip II

This was delicious! As someone else suggested, I mixed the mozzarella into the dip rather than melting on top so that it was easier to dip. I also had to add a little extra mayo because I neglected to compensate for the saltiness of the paremesan and romano cheeses, and it needed a little more bulk to make it less salty. It ended up being perfect!

German Chocolate Birthday Cake

YUM! I think this frosting is the best frosting I've ever made! I'll never buy this kind of frosting from a can again. The cake could have been a little more moist, but I was happy with it for my first from-scratch cake. My whole family loved this cake!

German Spaetzle Dumplings

This recipe is delicious! I was trying to make an authentic German meal, so I made this as a side dish. Everyone loved it! I wasn't sure about the nutmeg (my regular recipe for noodles and dumplings does not use nutmeg), but I went for it and was glad I did. Delicious! Also, I don't have a spaetzle maker, so I just dropped them by very, very tiny spoonfuls. It took forever. I suggest using a spaetzle maker if you have one.

Honey Banana Muffins

These are delicious! My kids raved over them. As others suggested, I used half cinnamon and half nutmeg, and I also eliminated the raisins since we don't prefer them in muffins. The texture was moist, and the flavor was wonderful! These are great breakfast or anytime muffins!

Easy Oatmeal Muffins

Even with adding spices to the mixture to give this more flavor, the texture was dry. The baking time needs to be reduced or maybe the temperature. My oven is spot-on and usually bakes things perfectly. By following the suggested cooking time on these, they were over-baked, not quite burned, but very dark brown. I won't make them again.

Classic Bran Muffins

This make a delicious, hearty muffin! I used half whole wheat/half all-purpose flour, substituted 1/2 cup unsweetened applesauce for the oil and added a full teaspoon of vanilla. I also left out the raisins because my family doesn't prefer them. They turned out perfectly and were enjoyed by my whole family. These simple changes decreased the calories from 168 to 118 and the fat from 7 grams to .9 grams! Not bad for a moist, pleasantly sweetened bran muffin!

Chicken Marsala

This recipes is fantastic! I made it for our wedding anniversary dinner, and it made for such a special meal. I used Merlot in place of both the Marsala and sherry. The only thing I might do differently next time is to use less oil and butter and substitute some boxed stock instead to give it fewer calories without using the delicious flavor.
