Cowboy Skillet Casserole

Reviewed: Mar. 31, 2007
Something different and fun. I thought it was a little bland, so if I make it again I will add something to give it a little "kick," or I might use barbecue flavored baked beans. I put all the ingredients in a 9x13 and baked for 25 minutes. No one raved about this dish, or really commented at all; however, there was none left at the end of our dinnertime.

Everyone reacted strangely when I told them what was in the salad. However, once they tried it - everyone loved it. There were no leftovers!

Easy Mexican Casserole

Reviewed: Nov. 11, 2006
Easy and something different for a mexican meal. I did as others and used taco seasoning and black beans with the ground beef. In addition, I used Rotel tomatoes with green chilies and Mexicorn on top of the sour cream.

Best White Icing Ever

Reviewed: Oct. 28, 2006
Very Good! However, be careful, the icing is very stiff, and hard to spread. If you are afraid that you might "peel" up the cake, then you might want to add a little water.

Slow Cooker Chicken and Dumplings

Reviewed: Oct. 28, 2006
Great meal on a cold dreary day. I took other's advice and used chicken broth rather than water. In addition, I added a tsp. of cumin, tsp. of poultry seasoning, and a bag of frozen peas. I used Pillsbury Grand biscuits. It may be my slow cooker, but after 40 minutes the biscuit dough in the middle of the cooker was still not cooked. I transferred the dough from the middle of the crock to the sides, and after another 10-15 minutes it was done.

Apple Pie I

Reviewed: Oct. 24, 2006
Followed the advice of others and added 2 Tablespoons of flour. I made the pie three times now, with different apples each time...depending on the apples, you may need to add more flour. I believe that you might be safer adding that third tablespoon of flour, if you don't want the pie to be watery when you cut it.

Savory Chicken Breasts

Reviewed: Oct. 14, 2006
I got a better response from my family the second time around. This time I double the swiss cheese as others had advised, and I used a cup of crushed Townhouse crackers, and a half cup of seasoned bread crumbs.

Wedding Cake

Reviewed: Sep. 10, 2006
I made the cake as directed. It is very heavy...like a pound cake. I liked it; but the rest of the family didn't really care for it. It's the first time I've ever had to toss-out cake because no one was eating it. One of the things I did, but it was too late to try on everyone, was to cut the cake in half (sideways), and then iced the second half. The heavy pound cake was much better when there was less per bite, and more icing per square inch of cake.

We used this on baked sweet potatoes. After baking the sweet potatoes, I sliced them open, added about a tablespoon of brown sugar, and then topped it with cinnabutter. Mmmmmm....wonderful.
