About this Cook
I find myself working 10-12 hours a day, so I am usually looking for dishes that don't take too much time, or can be prepare early. On the weekends I like to spend a little more time in kitchen. Weekend breakfast is "desert" breakfast time; my granddaughters are usually visiting, so I like to make something sweet. When I'm not working my other passions are my family (my wife, 3 daughters, son, 2 granddaughters, and 2 grandsons), running, and music.
My favorite things to cook
I love Italian & Mexican! In addition, I grill-out year round.
My favorite family cooking traditions
My mom passed away in 1995, as a result of breast cancer. Growing up my mom would bake dozens and dozens of cookies during the Holidays. So, at Christmastime, I like to bake cookies and think of her.
My cooking triumphs
Hmmm....I don't know that I have had any "triumphs." However, I think my family appreciates my desire to please them with new meals. So, when they compliment me on my cooking - that is triumph to me!
My cooking tragedies
I have overcooked, undercooked, scorched..... However, the most frustratng is when I make a preparation mistake, and don't realize it until it's time to put dinner on the table.

World's Best Peanut Butter Fudge
Easy to make, and everyone loved it! You know it's good when people ask for the recipe.

Cowboy Skillet Casserole
Something different and fun. I thought it was a little bland, so if I make it again I will add something to give it a little "kick," or I might use barbecue flavored baked beans. I put all the ingredients in a 9x13 and baked for 25 minutes. No one raved about this dish, or really commented at all; however, there was none left at the end of our dinnertime.

Awesome Sausage, Apple and Cranberry Stuffing
Made no changes to the recipe; got rave reviews. Everyone was surprised at the ingredients, and how good it was.
