D's Famous Salsa

Great salsa! The first time I made it I used the exact recipe. The next time I used canned diced tomatoes with spicy peppers already in them and used green onions with tops instead of regular onion and it was terrific. I plan to keep these ingredients on hand. Everyone loved this salsa. It is especially good with lime flavored tortilla chips.

You can't go wrong with this recipe. I have made it time and again and every time it is a hit. Friends and family love it. It has just the right kick to it. Mild enough for everyone to enjoy.

Lemon Chicken Soup I

I made this soup exactly as indicated (only I doubled it for a family dinner). It was a big hit and we will definitely have this again. It was not too salty so I assume that it really depends on the brand of chicken soup base you use to make it. DELICIOUS!

Cheesy Ham and Hash Brown Casserole

There are so many awesome reviews of this recipe that you may never even bother to read mine but . . . we have this at EVERY single family gathering. We have to plan the rest of the food around this recipe because the entire extended family insists upon this particular recipe. Others have brought different versions but they just don't cut it with the "fam." You cannot go wrong if you try this recipe. Don't subsitute cream of chicken or celery soup for the cream of potato. It's a key ingredient and worth the trip to the market to get it if you don't have it on hand.

Chuckwagon Stew

The flavor was okay but it was WAY too starchy for us. With both the potatoes and the beans it was almost like eating mashed potatoes mixed with baked beans. We probably won't make this again. It was just average.

Frank's Famous Spaghetti Sauce

Awesome! We all loved it. I especially liked the ground turkey in it because it was less fattening and didn't give me that greasy film (even though I drained it well) that cold spaghetti gets with ground beef. I didn't change it at all and have made it several times. Delicious! Thanks, Frank.

Chili Rellenos Casserole

I have made this recipe several times from a slightly different recipe. Mine calls for four eggs and after baking you put salsa on top and sprinkle with cheese instead of the tomato sauce. I bake it in a 9x9 pan until set, about 40 minutes. I also use drained diced chiles instead of the whole ones.

Cheesy Potato Salad

This is a great potato salad recipe. I used baked potatoes (cooled then skinned) chopped into chunks for this recipe and it was just like "loaded" baked potatoes. My family just loved it. This will be a regular at our family gatherings. (I didn't have enough regular cheese so I used half regular sharp cheddar and half parmesan and it was really, really good.)

Meat Loaf Pie

This is an old family favorite. EXCEPT I don't use the crust and I use taco seasoning when browning the meat. I have also used French-cut drained green beans and it's still just as good.

Mama's Italian Wedding Soup

Excellent soup! I had some precooked frozen Ialitan meatballs on hand and used those and it made this recipe even better. I also used another cup of spinach and next time I make it will double the amount. Delicious!

Best Ever Cheese Fudge

We have made this for years -- we never cook it. We simply put it all in a big bowl and either mix it with our hands or use the mixer with a bread hook. Use no-salt butter and make sure everything is room temperature. I use half dry milk and half powdered sugar. It's not so sickly sweet that way. Make sure your dry milk is very finely granulated if you do this. Also yummy with lots and lots of chopped pecans in it. Delicious!

Peanut Butter Fudge

Has an excellent taste but too mushy for me. I like my fudge a little more firm. I'd try this again but would cook it longer than 5 minutes. Maybe to softball stage and then add the peanut butter and marshmallow.
