Hash Brown Casserole II

This is the recipe that I have used for years except that I lightly cook the hashbrowns before adding all of the other ingredients. I mix them together in a small bowl and then when the hashbrowns are half done add them to the hashbrowns stir to mix and then put in the oven with the topping. I like the way that the hashbrowns taste from being lightly browned in the better.

My Version of Yankee Beans

Delicious! I soaked the beans all day and then put everything together before going to bed. They were ready in the morning so after letting them cool I put it in the fridge to "mellow" for dinner. I did a couple of things differently. I used molasses instead of maple syrup, sauted my onions (and some celery) in a tsp. of butter. Left out the bacon entirely and when the beans were done I took out the bone and gleaned all the meat off and added that back into the pot. (Threw away the rest of course.) I added 1 beef bullion cube as well. I'm sure they would have been just as good by following the recipe but I went with what I had. Oh! I used Anazasi beans for that reason and they were really good. I don't think it matters what kind of beans you use.

Yankee Beans

Chocolate Chip Oatmeal Cake

Super delicious!!! VERY rich. I will make again but not use chocolate chips on top -- just the nuts. I used 1/3 c. coconut oil instead of butter and they were really moist and yummy.

Potato Soup with Ham

Delicious! Even better the second day (as is the way with most soups). I did, however, add a can of cream of celery soup to it to make it look creamier. Excellent recipe.

Delicious. Made exactly as written. Wouldn't change a thing. (I added chocolate chips and pecans. Would be seriously yummy with dried cranberries and white chocolate chips I think.)

Mom's Best Fruitcake

I used a can of mixed nuts and left out the salt. Don't get excited and cut into it right away. It needs to sit at least 24 hours before you cut into it -- even longer if you can possibly resist. ;-)

Pan Fried Brussels Sprouts

I cut off the tough end and slice in half. I add them to hot olive oil that has had the garlic added to it already (and lots of it). I fry them until they look burned. This makes them SO sweet and yummy. Every time I make them we always say, "Why don't we have these more often?" They are $2.98 a pound that's why!!! Worth it though when you can make them this delicious.

Oat Soup

Excellent! I was amazed how good this soup was. I browned the oats and then I used a can tomatoes with onion and garlic already in it. I added the water and the chicken soup seasoning. I chopped and included the cilantro but I think I would leave it out next time. It just didn't need it. I will definitely make this again.

Vanilla Wafer Cake II

First of all you need to make this cake exactly as written. I put the cookies in a large baggie and used my rolling pin to crush them. Easy peasy. Dense and moist. Keeps well. On another site it suggested melting a little butter in your frying pan and frying a slice on both sides. Next time I make it I'm going to use my oblong bundt and try that. Sounds like it would be really good with a bit of crushed strawberries and whipped cream on top.

Cake Mix Cookies IV

Quick and easy. Let the dough sit for a few minutes as it firms up and is easier to handle. The kids loved these. I used butter cake mix with milk chocolate chips.

Pork Chops a la Slow Cooker

The best slow cooker recipe for pork chops EVER! I had some mushroom leftover from another recipe and I tossed those in a buttered slow cooker. On top of that I put the four large thick pork chops after preparing them as instructed. I poured the soup on top and set the cooker for 10 hours. The chops were done in four. Scrumptious!!!!

Baked Salmon Fillets Dijon

Scraped off most of the topping because we didn't like it.. After scraping it off though the salmon had a nice flavor to it so it wasn't really ruined. Not my favorite but I think it will give the Curried Salmon Salad (recipe on here) just the flavor it needs. ;-)

Curried Salmon Pasta Salad

Made exactly as written and while it was good, I thnk it lacked something. (But, before you add anything, I'd suggest you let it sit in the fridge for a few hours and then taste -- it changes from the time it's made to the time it's served if you give it a few hours.) Anyway, I added some garlic salt and some onion salt - just to taste - and that gave it a little more zing. Overall the recipe is good.

Delicious! This white sauce is super easy but if you are a fan of Shirleyj (shirleyj.com) mixes, used her white sauce mix instead of making the white sauce here. This is really a yummy way to do fish.
