We have had this several times over the past two weeks. Seems we can't seem to get enough of them. We have tried LOTS of veggie fajita recipes and just hadn't found one that hit the spot. We decided to try this one because it had yellow squash in it -- and I am SOOOOOO glad we did. These are yummy. We used 1 tbsp. olive oil instead of 2 tbsp. vegetable oil and I really think you could even leave the oil out all together as the veggies release a lot of liquid.
