Famous Pork Chops

Made these the other day, and DH gave these a thumbs up. This one is a keeper. Instead of butter, the chops were browned in light olive oil in a frying pan and transferred to a sheet cake pan, lined with foil & sprayed lightly with olive oil spray. Baked them at 300 degrees, uncovered in the pan for about 25 minutes, then turned them over and baked them for another 25 minutes. During the last 15 minutes, the temperature was increased to 375 degrees so that they would be crispy. These chops were very tender and good.

Simple Beef Short Ribs

These were easy to make. We wanted something w/o barbeque sauce on them, and this fit the bill. Changed the method of preparation a bit by doubling the amount of pepper & flour with the same amount of salt and putting it into a plastic bag and coating the pieces of short ribs inside the plastic bag before cooking the ribs. Didn't use the beer. After deglazing the pan with water & 2 beef bouillon cubes (we were out of beef stock), everything was put into a roasting pan. Baked the ribs in the oven with the cover on at 325 for almost 2 hours. ( Watch so that the liquid doesn't run dry in the roaster ). They turned out very tender and tasty. May use a crock pot the next time these are made as others have suggested. Thank You for posting. It's a keeper.

Soy Sauce Substitute

Just a comment here about the MSG. Kitchen Basics brand (comes in a box, not a can)doesn't have MSG & is gluten free; there is also a salt free version of this, but it's becoming difficult to find. Swansaon (again, comes in a box) doesn't use MSG. Herb Ox & Wylers also are MSG free & these may be more practical to use, as one doesn't have to open up a big box. One reviewer says that she freezes the leftovers in an ice cube tray. If you can't find any of these at your grocers, ask the manager to order it for you. Most grocers are willing to accomodate you.

Eggnog Quick Bread

Excellent bread! Did add 1/4 cup more eggnog as suggested by others. Also added 1/2 to 2/3 cup chopped pecans. The recipe made enough batter for 4 mini loaves which baked done in 30 minutes. The second time, it was baked in two 8" x 3 3/4" x 2 3/8" pans and were baked for about 50 - 55 minutes. Will try the suggestion of adding cranberries to this the next time it is made. Definitely a keeper. Thank You, Bev.

Oatmeal Craisin Cookies

Thank You, Liane for posting this recipe. Everyone in the family liked these cookies. They were crisp, and yet very chewy. Used all raisins instead of mixing them with craisins because I wasn't sure the grandchildren would like the mix. I did keep the dough in the refrigerator covered with a wet paper towel ( to prevent drying out) inbetween baking the batches. Because they don't spread while baking, I flattened them slightly with a fork. These cookies are a keeper and will bake these again.

Super Easy Spinach and Red Pepper Salad

Wow, this sounds great! Will prepare this & let you all know what we think. Thank You for posting this! 4/30/14 We enjoyed this very much. Only changes done were to use orange, red, and yellow peppers, plus a bit of sliced onions to taste. Thank You for posting this. Good base recipe to use.
