Rich and Creamy Tomato Basil Soup
I had some AWESOME tomato basil soup at Pockets one day... It was so good, I bought groceries the next day to try this recipe out.
This was pretty good, but tasted a little too much like the tomato juice I used. Also, I should note that I didn't peel, seed, or puree the tomatos, so perhaps that may be why the flavor is a tad too tart. Also, it wasn't as creamy as I had anticipated, even though I added 1.5 cups of cream. I guess a lot of the taste has to do with the type of tomato juice used.. next time, I might decrease the amount of bottled tomato juice (that stuff has a hideous amount of sodium, anyway), and perhaps use some vegetable broth to dilute it and mellow out the flavor.
One other change I made: extra basil, and... diced chives! Try it out.. it's got a nice kick :)
