Chicken and Asparagus with Penne Pasta

This was a quick simple, tasty dish. I added grape tomatoes, halved and fresh garlic at the end of cooking the asparagus. Flavor came from the fresh ingredients. I also sprinkled with a little crushed red pepper. Yum!

Creamy Greek Dressing

This was a nice change to plain ranch dressing. Used it on a greek salad for something different than a vinagerette. I would suggest making homemade ranch and not using bottled, it tastes fresher that way. Scaled this down to 12 servings.

The family loved this salsa. Everyone said it tastes just like a Mexican restraunts. Next time I will drain some of the juice from the tomatoes, it gets a little watery after a day.

The flavor is subtle enough to go with just about anything. I served this with honey-mustard-curry baked chicken for company and it was a hit. Looks nicer than serving plain rice.

Chipotle Crusted Pork Tenderloin

I have a tenderloin recipe that I always use but this one will be added to my file. I cut the Chiptole chili powder to 2 Tbs. Still a little to hot for kids, will only use 1 Tbs. next time. Otherwise really good.

This was o.k. The topping tasted good, but it didn't stick to the chicken very well. This is a recipe that I may make again but would not be the first chicken dish to come to my mind.

Excellent! This was worth spending $15 on saffron. The kids complained that it stunk, but they were surprised at how good it tasted. We will definately make this again.

Winter Fruit Salad with Lemon Poppyseed Dressing

Great salad. We eat salads every night and I am always looking for different variations. The only changes I made were spicy brown mustard for dijon(not a fan) and I used Oraganic White Cheddar Cheese(thats what I had on hand). This will definately be in my rotation.

Easy Four Cheese Lasagna

Kids loved this. I followed advice and used ricotta in place of cottage cheese and instead of can sauce I made "Best Marinara Sauce Yet" also from this site.

Karen's Spring Mix Salad

Although not a big fan of mixed greens, I still have to give this 5 stars. Salad was very tasty and it would not have been the same with romaine. I did take advice and used half garlic salt and half garlic powder.

Carne Asada Tacos

Great recipe. I did cut out the oil, felt it was unnecessary. It was getting late so to dave time I cooked the meat, after it had marinated, in the sauce. not enough leftovers for a meal so I sauted bellpeppers, onions and sliced baby portabellos added left over meat and sauce. Delish

Paprika Chicken with Mushrooms
