Colorful Chicken Casserole

This is a good basic recipe but you need to add things to it to make it more flavorful. I added red bell peppers and yellow squash to the veggies. I added about 1/4 c. white wine when I added the chicken and pasta. I noticed I needed more broth so I added 1 can of cream of celery and about 1/3c more broth. The pasta would have absorbed all of the broth had I not added extra. I seasoned with salt and pepper then put it in the oven. The cooking times are RIGHT ON. I only made 1/2 a serving and it seriously made enough for 4 people with left overs. It's a good quick recipe to use left over chicken. Thanks so much.

Beef Stroganoff with White Wine

This recipe is pretty good but it's not really a "stroganoff". It would work better with rice than pasta but we really felt like pasta so I thickened it more. In my opinion, the wine sauce should be reduced down about 1/2 way before adding the cream/flour mixture. I added 1c heavy cream and 1c sour cream since I didn't have half n half. I also used left over steak from the weekend and chopped it up in 1" chunks. Since it was already cooked, I just threw everything in the onion mixture together. I omitted the mushrooms because my hubby hates them. I added peas, 1TBS of worscheshire sauce and a tad of crushed red pepper to give it another dimension. This was a good recipe. I'm not one that can just throw things together, though once I have an idea I never stick to the recipe. So, thanks for the wonderful idea. It made leftovers. :)

Stir-Fry Spicy Green Beans

These were really good. I only used 2 tbs of fish sauce and low sodium soy sauce. I simmered covered for 5 minutes then removed the cover. I tossed in a bit of crushed red pepper for a little spice. It was definitely a 4.5

Lancashire Hot Pot

3.5 stars. I feel like it needed an additional something...maybe a bit of wine, spice, je ne se quoi? I added peas and a bit of sage which gave it a nice flavor. I also browned ground lamb with the onions, added spices, and then layered. It was nice. Definitely a comfort food. I'll make again for another rainy day by the fire. It's a nice change...just needs a bit of tweaking...

Herbed Rice Pilaf

This is delicious. I made it several times. I have even done it on the stove top by just sauteing the onion in the oil. Then adding the rice to brown it. Then I added the broth and covered. It comes out very nicely.

Lamb Chops with Balsamic Reduction

I only had inexpensive basalmic and I didn't feel like going to the store so I used 1/2 vinager and 1/2 red wine. This mellowed out the tang of the cheap vinager. *** Ok, bought high quality balsamic and WOW. This is the way to serve lamb chops. Thank you.

Beef Stroganoff II

Very simple. I used left over beef that was already cooked so I didn't marinate. I threw in pan with onion and some olive oil to reheat. Then, I added about 1/4 c. wine. Followed the rest of the directions omitting the flour. Very good and easy.

Easy Cajun Jambalaya

OK, so I am not a Jambalaya aficionado, so I can't say how good this compares to "real" jambalaya, however....this is GOOD STUFF. I added red bell peppers and extra celery. I also added about 1c more broth. I also added 1 can stewed tomatoes. Oh, I only had one can of chicken broth so I used 1 c chicken broth and 2 cups beef broth. It was just perfect, so I believe tomorrow I may need to add some extra broth or something to make it not pasty. This dish is delicious.

Herb-Crusted Chuck Roast

The roast was delicious. I used Marjoram and Sage instead of savory and used dijon mustard. I cooked my roast for about 1 1/2 hours for medium and added carrots, bell peppers, onion and celery. I also added 1c. beef broth and 1/4c red wine with some salt, pepper and Worcestershire sauce. I served with mashed red potatoes. It was delicious. My only complaint is that I used 1/2 the sour cream for the sauce and 3tbs of the horseradish. That was too mild. Next time I'll use 1/4c sour cram to 3tbs horseradish...but we like things SPICY. I can't knock it down a star because we prefer things hot.

Creamy Beef Stroganoff

This was very easy and delicious. I used left over steak from the freezer, rather than ground beef. I sliced it thin and cooked it in the pan with the garlic, onions, etc. I also added some tarragon (1/2 tsp or so), cayenne pepper, and a splash of Worcestershire sauce. It was very simple and very tasty, even with the mustard. I was hesitant to add it, but it really adds depth. Thanks!

Pasta Primavera with Italian Turkey Sausage

Perfect! I added more red pepper, threw in some red wine (about 1/4 cup) and also added some artichoke hearts (probably 1 cup diced). It is beautiful and delicious.

Sea Bass Cuban Style

This is one of the best recipes I have ever made...and I cook 6 nights a week. I can't stress how perfect it is to any reader, but truly I never follow a recipe 100% and I made NO changes to this one. I even measured most things (which I never do) and it was PERFECT. I added extra crushed red pepper because we like spice and the recipe calls for just enough for one to taste the flavor of the red pepper, but not enough for a kick. I would recommend using unsalted butter at the end, since the capers and the olives provide plenty of salt to the recipe. I also added whatever fresh veggies I had in my garden. Thank you for this perfect recipe. I have not found a better recipe on this site.

Chicken with Lemon-Caper Sauce

I'm moving and have packed nearly everything in my kitchen. This recipe is not only easy, but does not require many items. I added a clove of garlic to the boiling wine sauce and used salted butter because I felt it needed more zing. I didn't measure the lemon. It was very simple and really good. Will go into my rotation. Thanks!

Marrakesh Vegetable Curry

My mom is moroccan and I always wanted her recipe for what she called her cous cous. I decided to try this recipe just to see if it would come close. This recipe is almost exactly her recipe. I doubled the spices (except the cinamon and salt) and added about 1 tbs of corriander. I eyeballed the olive oil and I added a bit of beef broth to the mixture near the end because I like my curry more runny. You wouldn't want to add the broth in the end if you don't. I sauteed lamb pieces in olive oil and cumin prior to putting in with the veggies. I served over basic cous cous and it's almost exactly her recipe without taking 2 full days to prepare. Thank you so much!

Beef Stroganoff III

I am giving this 4 stars instead of 5 only because I made modifications while I was going, which isn't new for me. It's hard for me not to reach into the spice cabinet. I added about a teaspoon of taragon and about 1 tbs of worsch. sauce. As it was cooking I added more beef broth as it started to thicken and stick to the pan. Watch it the first time you make it so that it doesn't burn. I added 1/3 c. cream cheese and the sour cream. I added no salt, other than the salt I put on the meat. Oh, I also used left over filet mignon and portobello mushrooms from Christmas Dinner...it was DELICIOUS!

Pasta with Hot Sausage Sauce

I've made this a few times and it's wonderful and very easy. We like things spicy so I put a bit extra crushed peppers. If you don't like it hot, I'd try some papricka instead of crushed red peppers. It's a great recipe.
