This recipe has quickly become my go-to pancake recipe! I grew up on Bisquick pancakes, and tried a number of made-from-scratch recipes that never quite came out right. This particular recipe, though, comes out perfect, every time.
The baking soda/baking powder in the batter needs time to work their magic (creating those bubbles in the batter which makes the pancakes super fluffy) - so I usually prepare the batter and let it sit while the pan heats up. Don't re-mix the batter once those bubbles appear, that's what makes the pancakes light and airy!
I generally don't put the butter in the batter - I use a little butter in the pan instead of non-stick spray. I also usually add 1 tsp of either vanilla or almond extract - the almond pancakes have quickly become a favorite in our house! It's also great with fresh blueberries in the summer, or pecans!
