Fluffy Pancakes
This recipe has quickly become my go-to pancake recipe! I grew up on Bisquick pancakes, and tried a number of made-from-scratch recipes that never quite came out right. This particular recipe, though, comes out perfect, every time. The baking soda/baking powder in the batter needs time to work their magic (creating those bubbles in the batter which makes the pancakes super fluffy) - so I usually prepare the batter and let it sit while the pan heats up. Don't re-mix the batter once those bubbles appear, that's what makes the pancakes light and airy! I generally don't put the butter in the batter - I use a little butter in the pan instead of non-stick spray. I also usually add 1 tsp of either vanilla or almond extract - the almond pancakes have quickly become a favorite in our house! It's also great with fresh blueberries in the summer, or pecans!

Simple Scones
Perfect basic scone recipe! Like so many other reviewers, I put the dry ingredients and butter in the food processor - a few pulses and the frozen butter is perfectly incorporated into the flour. I omit the raisins (my husband doesn't like them) - but I've done sweet scones by adding chocolate chips or cinnamon, and savory scones with rosemary, cheddar and chives, or whatever else I have in my cabinet. Very versatile!

World's Best Scones! From Scotland to the Savoy to the U.S.
Wonderful basic scone recipe! I like my scones light and fluffy, so these were perfect. :) I substituted bread flour for the AP flour, and added in 1tsp of cinnamon, vanilla, and orange extract, as well as a handful of chocolate chips. YUM!
