Harvest Rice Dish

Loved this! Toasting almonds was a great recommendation. I created too much orange zest by mistake and included about 50% more than the recipe which I wouldn't repeat. Next time I'll try with less butter (for health, not taste) and I think it will work. This dish was a hit with all and will definitely be repeated!

Loved it! It's not pretty but the flavour is fantastic! My seven year old had THREE helpings and my in-laws were impressed. Will definitely make many times.

Cheddar Cabbage Casserole

This recipe was really popular with my husband and young kids. True comfort food on a cool night too! Next time I would use even more cabbage ... it was too creamy for me but the flavour was great.

Caramel Apple Coffee Cake

Good recipe. I exchanged half the oil for applesauce and nuts for dried cranberries (kids won't eat nuts!) I made the cake in a regular pan and found the cooking time far too long. I cut it by 25 minutes and the crust was still too dry. Will definitely make again with adjustments to cooking time.

Cottage Cheese Chicken Enchiladas

Not special but a good recipe for a family meal. A bit spicy for little ones but nice for adults. We used a soy "chicken" substitute and found it worked well. Will attempt with tofu another time.

Blenty of Blintzes

I thought this was terrible. I followed the recipe exactly and it was too salty, unpleasant in texture and otherwise essentially bland. My husband (who likes all food) found it pretty unpleasant and my son wouldn't eat it at all. Will definitely not make again.

Fabulous Cilantro Pesto

We just hated this! Followed the recipe exactly and found it inedible. It might be improved by the suggested lemon juice instead of vinegar but I won't be trying it again to find out.

Orange Glazed Carrots

I thought these carrots were OK but nothing special. They looked very pretty & glazed but tasted very simply like carrots with orange juice & brown sugar. Not sure what I expected but had hoped for something a bit more "special."

Green Bean Casserole I

This recipe was a huge hit at Christmas dinner and worked very well to make ahead. I simply prepared the sauce & stuffing topping then assembled and refrigerated until cooking time. Might try with brocolli & cauliflower next time.

Kickin' London Broil with Bleu Cheese Butter

This rating is for the Bleu Cheese Butter only ... used the butter to top a salad with organic greens and balsamic marinated portabello mushrooms (sliced). Absolutely fantastic!! Great for a first or second course in a special meal and easy to prepare.

Gorgonzola and Olive Stuffed Grape Leaves

The filling had an excellent flavour but did not work well for us in grape leaves. The process of stuffing the leaves was onerous and they were messy to eat. We ended up using the filling as a "bruchetta" on small toasts of bread. That was very well received for flavour but didn't look too appealing. Might use again as part of an hors d'oeuvres tray but would never try the grape leaves again. Interesting experiment though!

Annie's Fruit Salsa and Cinnamon Chips

Fantastic! I used apricot brandy rather than fruit preserves and a bit of Certo to thicken. This recipe was a HUGE hit and will be used over and over again! Perfect for dessert at a summer bbq.

Hot or Cold Vegetable Frittata

This was excellent warm or room temperature. A big hit at a buffet dinner party and for leftovers the night after. Another time I would make it with only one package of cream cheese. With two it was a bit overwhelming and over-rich. Generally, an excellent recipe!

Lite Carrot Cake

Excellent recipe. My only complaint was that it wasn't quite a moist as most carrot cake but I guess that's the price you pay for a healthier version. I made cupcakes for my son's first birthday using this recipe and topped them with cream cheese icing. Bigger kids (including grandparents!) got to top them with jellybeans and mini-M&Ms and they were a big hit.

Cavatappi with Spinach, Garbanzo Beans, and Feta

I tend to make everything SPICY ... this was a nice, flavourful departure that didn't leave me feeling disappointed. I didn't strictly measure the flavours of salt, pepper and lemon but used them according to taste. It tasted super!

Broccoli Quiche with Mashed Potato Crust

This recipe is quite generic but the beautiful part is the potato crust. I'm an ovo-lacto vegetarian who does NOT like pastry. This recipe led to a new appreciation for quiche! I've made it with spinach and veggie sausage, asparagus and veggie ham ... the key to success is the wonderful potato crust!
