Cinnamon Roasted Sweet Potatoes

Excellent. I wouldn't have thought of the salt, but it's part of what makes this so good. Kids loved it, adults loved it, I made sure to squirrel some away for breakfast tomorrow without anything noticing. What a wonderful and colorful item to add to the dinner (and sneaky breakfast) table. Thank you!

Sean's Falafel and Cucumber Sauce

I didn't make the cucumber sauce, as I used a store bought version I love, but the falafel is excellent and not nearly as difficult to make as I'd thought. It made for a great and much more interesting Ash Wednesday dinner.

Delicious Ham and Potato Soup

Oh my goodness, this is good. I did modify the first time, but I'm sure the original is awesome also. I added an equal amount of carrots (rainbow carrots give it great color, and kids find it interesting) sauteed the vegetables before adding anything potatoes or anything. We made with gluten-free flour, due to dietary restrictions, which worked fine, and I added about 1 to 1 1/4 tsp of rosemary. Some liked it with cheese, others liked it plain. I added extra pepper to picky brother conned me into sending some home with him, kids all ate and LOVED it, and husband is taking it to work. Seriously, make this, modify it, don't, whatever. You will love it. Thank you for sharing this, Ellie.

Fresh Southern Peach Cobbler

We made this gluten-free, and it was great. I had 7 or 8 LARGE Colorado peaches, so I'm glad I went with a 9x13 dish. After doubling the topping, it still overflowed and made a bit of a mess in the oven. We used King Arthur All-Purpose Gluten-Free Flour, and I used about 1 1/2 of the cinnamon sugar topping, and the amount of peaches to topping, baking time, temp, sweetness- everything was perfect. I will definitely make this again. Thank you!

Samoas Cookie Bars

These are close to the original, but don't taste quite the same. The caramel topping is a big chewy and unbalanced from the shortbread cookie. The crumbliness of the cookie causes a problem when trying to dip it because it tends to break into pieces that stay in the chocolate. I would add more milk to the caramel to keep it softer, and mix the shortbread to a more dough-like state to keep it together better after baking when dipping. Otherwise, these are a great cookie and work to replace Samoas in a pinch.

Grilled Chicken Salad with Seasonal Fruit

Awesome. I don't normally like vinaigrette dressings, but this was phenomenal. My son, who hates onion loved it, even after I told him what was in it, and gave it a rave review FoodTV-style. I did use about 3/4c oil and a little less than 1/2c sugar. The slight spice from the pepper and the onion flavor was perfect. You could use onion powder or onion salt, as some strawberry spinach recipes do, but I think the fresh onion just makes it much better. I used a spring salad and some spinach because it's just what I had around. Everything else I always have around, so this is a fabulous quick spring or summer dinner when I can't think of anything else. We used strawberries and mandarin oranges, but I think this would definitely work with pears, apples, raisins, dried cranberries...just about anything you can imagine on a salad. I was specifically requested by my pickiest eater to have this again and often. Great recipe. Thank you!
