I love Zuppa Toscana and was happy to find a recipe. Like reviewers said, I used Kalp instead of spinach, I tore of the edges and put it in the last 10 minutes of simmering. Also I used spicy sausage. 1lb is wayyy too much sausage, next time i will only use 1/2 lb. 6 potatoes are way too much too. I only used 3 large ones and it still seemed like the soup was more of a stew. For good flavor put the sausage in the soup at the beginning instead of the end. Overall doing these things I got rave reviews for my dinner guests and I personally thought it tasted better than the restaurant style. 5 stars!!
