Easy Crabmeat Enchiladas

Very good! I was afraid of the imitation crabmeat, but mom and dad loved it. I also added shredded cheddar to it. I used whole wheat tortillas. I did not dip the tortillas in milk.

Broiled Scallops

I didn't have lemon so I used lime instead. I just sprinkled the garlic salt on. I probably didn't use a whole tablespoon. My husband agrees these are just as good or better as any you get in a restaurant.

Award Winning Soft Chocolate Chip Cookies

I used whole wheat flour in place of the white. I also used sugar free pudding and splenda in place of the white sugar and decreased the amount of brown sugar. I used one stick of light margarine to replace one stick of butter. I used one bag chocolate chips and one bag of peanut butter chips. They came out soft and very yummy!!!! Everyone loved them.

Tofu Chocolate Pudding

I thought I was going to hate it. Because I tasted it when it first came out of the blender and all I could taste was the tofu. I let it chill overnight and then ate half of it the next morning because it was so good! It did remind me of mousse or even ice cream! I added a little bit more milk to it because I was having trouble mixing it in the blender. I also added a tablespoon of peanut butter and a packet of splenda and equal. I used 3/4 cup chocolate chips because I had 14oz of tofu.

My Crab Cakes

My husband said he felt like we were eating a restaurant meal. They were excellent. I used the reduced fat Ritz. Maybe 1 1/4 sleeves. I used about 1/4 cup of bread crumbs and only enough oil to brown them a little. I'll try more and/or better crab next time.

Lighter Snickerdoodles

I doubled the recipe and used light instead of low fat cream cheese. Our family loves soft cookies and these are perfect. I also made some w/ green and red sugar for Christmas. They are sticky as you are trying to roll them. I tried to keep my hands cold!!

Chocolate Chip Pumpkin Bread

I increased the recipe and gave some as gifts. I made 3 regular loaves and 2 mini loaves. I used regular chocolate chips. Everyone loved it! Nice and moist.

Pineapple Angel Food Cake I

I made this for my grandfather's birthday because he loves angel food cake. Everyone loved the pineapple. I used 8oz. cool whip cause that is what I already had in the freezer, and it was plenty! I added 1/4 tsp. coconut extract and 3/4 tsp. vanilla. I also toasted some coconut and sprinkled that on half of the cake.

Deep Dish Brownies

I just made this exact recipe from the Hershey's web site! I cooked them for 40 minutes and they came out perfect. I also substituted 1/2 stick of light margarine for the butter. I used 1 cup sugar w/half cup of Splenda. Very good!

Country Quiche

Very good! I used 8 egg whites and one yolk. Fat free half and half in place of the milk. Six slices of turkey bacon in place of regular. A little more cheese too. We threw out the edge of the crust because I did not cover it, and it was too much crust. The filling did not rise very much. Overall, very tasty. We had it for dinner w/ potatoes.

Beef Stew IV

My husband and I really enjoyed this recipe. I used 3 pounds of top round. I skipped the corn and garlic. I added 8 grams of beef broth seasoning. I used 4 big carrots and 5 potatoes. For the thickener I used 5 tbsp cornstarch w/ 5 tbsp cold water. I put in about 6 cups of water overall. I simmered the meat for only an hour. The beef was very tender. My husband had it w/ rice and I ate it plain.

Apricot Cream Cheese Thumbprints

I used 11/4 cup butter and margarine and I also used Neufchatel cheese to cut the fat a little. I added 1 tsp of vanilla and used strawberry preserves. They do seem like little biscuit cookies, but adding the lemon juice and vanilla make them a cookie. They are nice and soft. I was generous w/ the preserves! They were very good. This was the first time I made thumbprint cookies.

Granny Kat's Pumpkin Roll

I made this recipe for Thanksgiving. Everyone loved it! I don't like plain pumpkin pie or pumpkin cream pie for Thanksgiving dessert. This was perfect! Very moist and pretty. I used a jelly roll pan greased. Then greased and floured on top of parchment paper. It came out fine, but I think I let it cool too long because it cracked on me rolling it up after the filling. Fortunately the crack was on the bottom!

Pudding No-Bake Oatmeal Cookies

I followed the recipe exactly, but I used sugar free pudding and evaporated skim milk. They never hardened. They taste and feel kind of like fudge or icing w/oatmeal! I'm sticking to the regular pudding oatmeal cookies that you bake.

Favorite Banana Blueberry Quick Bread

Very moist! I used the applesauce in place of the shortening and decreased the sugar as suggested previously. I also used 1 cup frozen blueberries. I omitted the nuts and added some more oatmeal. My husband and I really like it especially since it is so healthy and delicious at the same time.

Crab Casserole

I agree that it was a little dry even though I added more mayo and some mustard. I put some horseradish in too. My family all agreed there was too much celery. I added some cheddar on top. I think it needs some sour cream or something to kind of bring everything together and make it more moist.

Eclair Cake

My husband loves Boston Cream Pie and he really loved this dessert. He was also happy that it was reduced fat and calories. I made it w/ reduced fat graham crackers, light cool whip, skim milk, and sugar/fat free pudding. I cut the recipe in half and put it in a 8X8 inch pan. I also made half of the Busy Day Frosting from this website. It was very yummy and easy. I will make it again very soon.

Ham Broccoli Braid

I used less ham and more broccoli. I used purple onion and cheddar cheese. I also used reduced-fat crescent rolls. I shaped it into a ring. It was very good. I liked it more than a chicken one I had that included mayo in the mix.

Silver White Cake

I used light butter for the shortening and added 1/2 tsp almond extract. I baked it in a 9x13 pan w/parchment paper on the bottom so I could take it out and cut it in half. I knew it was risky, but it really came out great. It was thin and dense but very tasty and yummy w/vanilla pudding in the middle. I frosted it w/chocolate peanut butter frosting.
