Chicken Enchiladas

so easy and so good! I took the advice of some other members and added green chiles and tomatoes to each enchilada to give them a little more of a kick. to cut down on the fat I used reduced fat sour cream, reduced fat cream of chicken soup and reduced fat cheese and it all still tasted delicious.

Tree-Shaped Crescent Veggie Appetizers

I took this to a Christmas party and everyone LOVED it. I modified the sour cream/cream cheese mixture by adding 1/2 packet of ranch dressing mix to it and leaving out the dill and garlic. It really adds a nice flavor.

I took the advice of others and modifid it the following way: 1)1/2 cup BBQ sauce on the bottom of the pan, 1/2 cup on top of the chicken 2)cooked bacon seperately

Roast Pumpkin and Feta Risotto

This was a little bland for my taste. I even added extra salt and pepper and dried cranberries. If I didn't add the cranberries I think this dish would have been way too boring and bland. Next time I'll try adding some more cheese and seasoning. Just okay in my book.

Black Bottom Cupcakes I

Amazing! I actually forgot to add the chocolate chips to the cream cheese filing so i sprinkled a few on right before they went in the oven but I thought they almost tasted too chocolately with the few I sprinkled on and took away from the awesome cream cheese filling. Next time I'll leave them out. Also, I was really nervous about there being not egg in the batter recipe (I guess I am just used to adding egg to all of my cake recipes). But don't worry it came out the perfect consistency. Also, for those show said the cream cheese amount is too much, I disagree. I thought you could even use more! Just my opinion. I'll def make these again, thanks for sharing :).

Easy Italian Chicken II

Easy recipe but the chicken was a little dry. An hour is way too long. I cooked 2 breasts (cut in half) for 35 minutes and it was plenty long. Def poke with holes when marinating and add mushrooms. I also added all the marinade to the chicken while it was cooking so that we would have some sauce to pour over the chicken. It was all eaten and it is good for a fast midweek meal.

Caramelized Onion and Gorgonzola Pizza

I agree with a lot of the other posts in that the gorgonzola needs to be decreased for our tastes. I also added chicken and some mozzarella cheese to mine. Amazing!!

Herb Roasted Pork

Highly recommend. Pork-hating fiance even loved it. I used a 1lb pork loin and baked for 45 min at 350. I'd recommend even slightly less time for more tenderness. Definetly double the seasoning though. I used the same amounts for 1lb and thought it was just enough. Will def make again!

Beef and Bean Chimichangas

Made a few revisions. First, like many other reviewers I added a small can of tomato sauce and a packet of taco seasoning to the meat. Second, I added a spoonful of tomatoes and chilis on top of the meat mixture inside each chimichanga. Third I used whole wheat tortillas and sprayed the tops with Pam before sticking in the oven. Third, I sprinkled cheese on top of them with about 5 minutes to go. Easy and delicious! :)

Curried Coconut Chicken

Amazing! Tastes just like (or better!) than our favorite Indian restaurants. Just a note, I used the unsweetened coconut milk and it tasted great. I think the sweetened would be too sweet for our liking.

Buffet Meatballs

Brought these to a work potluck for about 50 people and they all went. I took the recommendation of another member and added some red cayenne powder and that definitely added a great spice/flavor to it. I also recommend using the lowest fat meatballs you can find or turkey meatballs. The first time I made them with turkey meatballs and the sauce was perfect. The second time I used regular frozen italian meatballs and the sauce became very thin and had a layer of fat/oil on it. But they were still awesome!
