Black Bean Lasagna II

Excellent but I really kicked up the bean mixture. I used spices in the same ratio as I used in the amazing Flatlander Chili recipe on this site, just way less chili powder.

Thanksgiving Meatloaf

Ground turkey just does not make a good meatloaf. My fiance politely asked me never to make this again. I thought it was okay but the leftovers did not appeal to me - leftover meatloaf should be a hot commodity the day after!

Oatmeal Grapefruit Quick Bread

Yummy. I used soy flour and real butter and freshly squeezed grapefruit. When I tasted the batter I worried that it was a little too tart so I also added about a quarter cup of turbinado (raw, unprocessed sugar). I will make this again.

Black Bottom Pie I

This pie started out pretty well- the bottom layer tasted delicious. Had problems with the top though: used dark rum for flavor and found that the darker rum color (along with the egg yolk mixture) looked extremely unappealing when folded into the egg white mixture. Ultimately I scraped the top layer off the pie and made a half batch of Chocolate Mousse I (off of this site) to use instead (the recipe uses rum). I topped the mousse layer with some fresh whipped cream and chocolate shavings. In the end, I had a beautiful and tasty Chocolate Rum Pie.

Apple Crumble Pie

I used a 10 inch pie pan instead of a 9 inch deep dish, and the pie was tall and tasty after baking for 40 minutes and then sitting in the turned-off oven for awhile. I made the crust from scratch (messier but yummier than the ready-mades!). I worked the cinnamon and sugar, along with the juice of half a lemon, into the apple slices with my hands before putting the apples into the crust. I also added some cinnamon to the crumble topping. Used Granny Smith apples: delicious!!!

Sizzling Chicken Skewers

These were pretty good! I marinated the green peppers with the chicken. I found that mine had a very strong peanut butter taste. I suppose you could revise the proportions of the marinade to fit your tastes.

Pecan Pie V

Great pie! Everyone enjoyed it, from those who have been indulging in pecan pie for years to those who never like pecan pie before. I used a mix of chopped pecans and pecan halves, probably about 1 1/3 cups total. Before putting the pie in the oven I pressed 4 pecan halves in the middle of the top of the pie in an "x" shape as decoration.

Pumpkin Cheesecake Pie

Mmmmm... I could tell that this pie was going to be delicious after I taste-tested the batter. I brought the pie to a pre-Thanksgiving potluck and it was a huge hit with everyone, especially compared to the straight-up pumpkin pies with their overwhelming pumpkin spice flavors. Fresh whipped cream garnish is a must!

Teena's Spicy Pesto Chicken and Pasta

This recipe is awesome. The cilantro works wonderfully in this dish, and I encourage the addition of goat cheese right at the end of the recipe- it gives the pasta great depth. I garnished this with pine nuts and sundried tomatoes.
