I used a 10 inch pie pan instead of a 9 inch deep dish, and the pie was tall and tasty after baking for 40 minutes and then sitting in the turned-off oven for awhile. I made the crust from scratch (messier but yummier than the ready-mades!). I worked the cinnamon and sugar, along with the juice of half a lemon, into the apple slices with my hands before putting the apples into the crust. I also added some cinnamon to the crumble topping. Used Granny Smith apples: delicious!!!
