Lemon Basil Grilled Chicken

This was an easy marinade using items I typically have in my kitchen. I marinated about 6 hours. The chicken was tender and juicy and we thought it was good, but, not great. The only element we could taste was the lemon juice. It was very tart and seemed to be missing something. I wish it had a stronger basil flavor. There are so many really good chicken marinades that I probably won't make this again.

Lemon Crumb Muffins Recipe

I think there were aspects of this muffin that I really liked, but, it would need a little tweaking to the recipe to work for me. I prepared exactly as the recipe stated, except I added a little extra lemon juice because it did not seem lemony enough. I also thought the crumble was a little powdery. I think it needs a touch more butter to make it more of a crumble. The batter is unbelievably thick, so, don't think you did anything wrong once you make it. Based on other reviews I made a simple syrup with 1/3 cup lemon juice and 1/2 cup sugar and drizzled over some of the muffins while they were hot. The ones that had the drizzle were definitely better than the ones that did not. They were slightly dry and they were definitely not overcooked. The texture is heavier than a typical muffin, but, still good. I would make these again, but, drizzle a little extra of the simple syrup I made on them next time and that may help with the dryness. I think it would be better with a little extra lemon zest added also.

Corn Salad with Lime Vinaigrette

We loved this recipe! I made exactly as the recipe stated with the exception of using a shallot instead of white onion. The flavors worked well together and was perfect for a light summer meal along with the Margarita Grilled Shrimp recipe from this site. This would be even better with fresh corn.

Grilled Masala Chicken with Vegetables

My family is not a fan of the garam masala seasoning, but, I really like the cooking method because it is perfect for summer. No heating up my kitchen and no mess! I tried one packet with the garam masala seasoning and the other packets using a marinade of whole grain mustard, olive oil, brown sugar, lemon juice, & fresh garlic. We did not like the packet with the garam masala. We don't like the flavor and thought it was bland. We did like the packets with the mustard marinade. I did not care for the vegetables because I don't think steamed vegetables have a lot of flavor and I think the texture gets a little mushy. However, my husband did like the vegetables. We both thought the chicken was very moist. I would use this cooking method again, but, switch around the flavors and ingredients in the packet.

Grilled Salmon Greek Pitas

I wasn't sure what to expect from this recipe, but, I was pleasantly surprised! It was light, flavorful, & so easy to prepare! Cooking the salmon in the foil packets left me with no mess in the kitchen or on the grill and was nice on a 95 degree day not to heat up my kitchen! I made exactly as the recipe stated, but, I did doctor up the yogurt sauce. I left out the basil and added cucumber, lemon juice, & fresh garlic to taste more like a tzatziki sauce.

Potato Salad I

Tasty Southern style potato salad! I didn't use quite as much relish as listed in the recipe and just added to taste. I also didn't add sugar, but, used a mixture of mayonnaise and miracle whip for sweetness instead. Thanks for the recipe!

Three Bean and Artichoke Salad

Very mixed reviews in my house. I thought it was a nice twist on a traditional sweet three bean salad. It is tangy and tart and a nice complement to the artichokes. My husband did not care for it at all and thought it was too acidic and needed some sweetness.

Banana Strawberry Oat Bread

I was looking for a healthier version of a quick bread to use up some bananas and strawberries. I thought there were several problems with this bread. I thought it would have a lot of flavor with the bananas, strawberries, cinnamon,& vanilla, but, I thought it was lacking something. I think it may need some extra cinnamon and maybe even a touch of salt to bring out the flavors. It was a little drier than most quick breads, but, it did use less oil. Maybe adding a little applesauce would help. My husband thought it needed to be sweeter also. I guess that would defeat the healthier side of it if more sugar was added though! Maybe a mixture of brown and white sugar? The previous reviewer suggested putting the bread into one loaf pan. Although it does make shorter loaves I think I would keep them in two pans. It took 25 minutes to bake in two pans it was perfectly golden on top. I think if you put it into one pan it would burn on the top and bottom before it is cooked. I would not make this again - there would be too many changes to it for me to make the recipe to our liking.

Peanut Butter Strawberry Smoothie

Unusual combination for a smoothie. It did give you a similar taste to the flavors in a peanut butter & jelly sandwich. My husband was a fan because he loves peanut butter. I thought it was just ok. I prefer a fruitier tasting smoothie. This is a very thick smoothie due to the yogurt, so, if you like it thinner you will need to add some additional milk or maybe some juice. I did use splenda instead of brown sugar, but, other than that made exactly as the recipe stated.

Spicy Lime and Dill Grilled Fish

This recipe was so quick to put together and great being able to cook the fish in foil packets on the grill. It is a great summer recipe. I added the red pepper flakes to the butter when it was still hot, so, it was really infused with the red pepper. If you don't like it too spicy - wait for your butter to slightly cool or use less red pepper flakes. I also used light butter. It worked perfectly and the flavor was great. I used fresh dill instead of dry because I had some to use up before it went bad and the fresh herbs were a great compliment to the fish.

Creamy Strawberry Fruit Dip

This was very easy to put together and had a nice strawberry flavor. I did add the 2 tbsp. of cream cheese, but, in the end I thought it tasted more like a strawberry flavored cool whip. It was nice and fluffy and good dipped with strawberries. I started with half the sugar based on suggestions from other reviewers and it was plenty sweet, so, I didn't add the remaining amount.

Quick Cream Cheese Fruit Dip

Very simple and easy dip to serve with fruit. It does have a very strong cream cheese flavor, so, I think it would be better with a flavored cream cheese like strawberry or honey. It would also be good with a little lemon or almond extract added. I used 1/3 less fat cream cheese to save on some calories.

Spicy Lime and Dill Grilled Fish

This was very simple to put together and had great flavor. I added the red pepper flakes to fairly hot butter, so, it really infused the butter and gave it a kick! If you don't like it too spicy, I would let your butter slightly cool. I used 3 tbsp light butter and 2 tbsp regular to cut down on some of the fat. I also used about 2 tbsp. of fresh dill instead of dried. Keep an eye on your fish because it is easy to overcook a flaky white fish. Very flavorful and I would make again.

Marianna's Marinated Pasta

I liked that this recipe was simple and tasted fresh with the herbs and lemon, but, there were several things I would change. I ended up adding more lemon after tasting it because the flavor diluted from the pasta water. As other reviewers stated the pepper ratio does not appear to be correct. 2-1/2 tbsp of pepper would be pretty overwhelming. I ended up using about 1-1/2 tsps. I also reduced the salt amount to our taste. I tried some warm and some cold the next day as the recipe stated. We actually preferred the warmer pasta. Probably would not make this again.

Lemony Zucchini Salad

This recipe was a light, refreshing, summer salad. We really enjoyed the brightness from the lemon juice and lemon zest. I am not a fan when a recipe says juice of a lemon or 1/2 a bunch of parsley because the amounts can vary depending on the size of your ingredients. My general rule of thumb is 3 tbsp. of lemon juice for an average sized lemon. 3 tbsp. was the perfect amount for my salad. My parsley bunch was very large and 1/2 bunch would have way overwhelmed the salad. I used about 1/4 of my bunch that equaled to about 1/2 cup chopped. I would start out lower on your parsley amount and adjust to your taste. Nice side dish that I would make again. It would also be great with some cherry tomatoes added in.

Corn Zucchini Skillet

Very simple recipe, but, a nice change to my standard zucchini, squash, & onions with the addition of fresh corn. I added just a touch of cayenne pepper to the seasoning and only used a sprinkle of cheese. I did not boil the corn it all - just threw it in the pan with my other vegetables and sauteed until crisp tender. Yum!

Cumin Rubbed Chicken with Avocado Salsa

Can I give this seven stars? We truly loved this recipe! I have to admit I was a little unsure if we would like this since the chicken had so few seasonings, but, it was very flavorful. I pounded the chicken out to about 3/4" of an inch for even cooking and cooked on medium for about 12 minutes total. The salsa was the perfect accompaniment. Don't be hesitant of using the cucumber in the salsa, it really works well with the other flavors. I served this with cilantro lime rice and black beans. Fresh and flavorful!

Amazing Muffin Cups

This was a big hit in my house! I made exactly as the recipe stated, but, used freshly grated potatoes that I rinsed and dried well instead of frozen hash browns. Mine took closer to 18 minutes to cook, but, were moist on the inside and crispy on the outside. I did spray my muffin tin with a little cooking spray because I was afraid they would stick. This would be wonderful to make for a crowd. I would cook the sausage the night before so that step was done and double the recipe to make 24. Thanks for the recipe, Johnsonville!
