Creepy Mini Pizzas

These are such a cute idea for kids. You can just lay out the ingredients and let their imaginations run! They dough was easy to put together, but, mine was way too wet. I had to add quite a bit of flour to form a soft ball. I was not crazy about how the bottom crust cooked, but, it would probably be better on a pizza stone.

Chocolate-Filled Crescents

Yum, yum, yum! These are so easy to get together and decadent! I mixed some softened cream cheese with a little powdered sugar and spread a thin layer on the crescent triangle. I then added the chocolate chips and slightly pressed into the cream cheese. I rolled from the big end and made sure the open ends were facing up once rolled. This recipe is so versatile! You could fill with just about anything. I think some nutella and chopped hazelnuts would be amazing! Give these a try!

Tuna Salad Crescents

I was excited about trying these based on the reviews I read. I have to say though that this recipe really didn't work for my family. The recipe was very easy to put together and baked beautifully in about 14 minutes. However, we thought the sweetness of the crescent roll didn't work with the tuna. I think it is strictly a case of our own personal taste, because, it seemed that some people liked the contrast of the sweet crescent and salty tuna. I would not make these again.

Crescent Dogs

These were a blast from the past and brought me right back to my childhood! After reading some of the reviews about the temperature of the hot dogs, I microwaved them for about 30 seconds just to knock the chill off before rolling. I made the rest according to the directions and the temperature was perfect and the crescent rolls perfectly cooked. The only problem I had was - how the heck do you roll these things up - lol? Mine never seemed to cover the hot dog completely, so, I ended up stretching and maneuvering so the hot dog was covered and the dough wasn't too thick in some areas.

Irish Dairy Cake

Tried this recipe on the recommendation of another AR member. It was amazing! I made with just a few tweaks. I used cake flour instead of all-purpose flour because I prefer the texture you get from using cake flour in pound cake. I also used 1 tbsp of vanilla and 1 tsp of almond flavoring. I did have one problem. The cake came out perfect, but, as it cooled the cake seemed to sink and top cracked and crumbled. Luckily, I used a bundt pan, so, once I flipped it the top was hidden. Not sure what caused the cake to settle, but it was moist and very flavorful.

Roasted Broccoli & Crispy Polenta with Roasted Pepper & Asiago Chicken Sausage

In order to save a little on time and the extra calories I steamed the broccoli instead of roasting. The lemon juice really enhanced the flavor of the broccoli. I also used sun-dried tomato polenta and it was a nice compliment to the chicken sausage. I love the crispy outside and creamy inside you get from grilling or fying polenta. To be so simple to put together - this dish really had a lot of flavor. I do think it needed some sort of sauce. Next time I would experiment with a roasted red pepper sauce.

Progresso® Chicken Enchiladas

This was very easy to make and a great shortcut by using the rotisserie chicken. I made exactly as the recipe stated with the addition of adding some sauteed white onion to the filling. I did have more than 1/2 cup of the sauce leftover, so, I just poured all of it on top of the enchiladas. My family was not a huge fan of these enchiladas and probably would not make again, but, I do think it would be an easy recipe for a starter cook.

Creamy Arroz con Pollo

I decided to prepare this as a side dish and omit the chicken since it didn't seem to be the main contributor to the flavor. Unfortunately, this dish was not a success due to an inacurate cooking time and not enough liquid to fully cook the rice. I read the review of a previous poster saying she had that problem, so, I kept an eye on the rice so it wouldn't burn. The liquid was absorbed after 20 minutes, but, the rice was still crunchy. I ended up adding almost another full cup of liquid and it had to cook almost 45 minutes. At that time most of the rice was cooked, but, there were still some crunchy pieces throughout the dish. I gave it a two based strictly on flavor, but, I would have given it one star based on the cooking directions.

Italian Chicken Sausage Stuffed Portabellas

These were unbelievably easy to put together and very flavorful considering it had so few ingredients. 8 minutes was the perfect cooking time for my large portabella caps. In future, I think I would make this using the small portabello mushrooms for a smaller bite. The filling is very rich due the cream cheese.

Greek Salad with Spinach & Feta Chicken Sausage

This salad was really easy to put together and was very good! I made it exactly as the recipe stated with the exception of using black olives instead of kalamata. I am sure the kalamata would be even better, but, the black olives were more economical. Easy weeknight light meal.

Cheese-Stuffed Giant Meatballs

I really wanted to like this recipe because I loved the idea of cooking it in the muffin tin and the "cheese surprise" in the middle. The flavor fell really short though for my family. The only flavor that we could taste in the meatloaf was the roasted tomato cooking sauce and it had an acidic taste that was not palate pleasing. In addition to the flavor the texture was not appealing at all. It was mushy. I think the ratio of liquid to meat is off.

Easy Weeknight Bacon Mac 'n Cheese

I thought the flavor on this was pretty good. I also think the ratio was off on the amount of pasta you need. I made a letter extra pasta and added almost another cup to the sauce and it was a good consistency. I also used fresh bacon instead of bacon bits. Honestly, this didn't seem any faster to me than making a mac and cheese homeade from scratch. My family would prefer the homeade and I am not using anything canned so I can control the sodium levels & not use a processed food. I don't plan on making this again.

Zucchini e Pomodori Gratinati (Zucchini and Tomato Gratin)

Yum, yum, & yum! We loved this! I made exactly as the recipe stated with the exception of using 1 tsp. dried basil instead of fresh. I am sure it would be even more amazing using fresh basil. I made this at the end of the summer season, so, the tomatoes were not at their summer's best, but, this dish transformed them. Definitely will be making this again.

Three Bean Salad with Corn

This salad was very colorful and had a lot of texture. It was good, but, not great for us. I think it needed to have more dressing and for our taste needed a little more tang. I didn't add the additional 1/4 cup of sugar and it still seemed a little sweet for my family. If you like a sweeter salad - you would probably enjoy this recipe.

Bourbon Spiced Pork with Sweet Potatoes and Apples

This was really so easy to prepare and a showstopper! It looked beautiful plated and the flavors were really good. I loved the orange flavor in the sauce over the sweet potatoes. I will definitely be making again.

Marshmallow Buttercream Frosting

I was afraid that the marshmallow creme would be hard to incorporate, but, it folded in beautifully. This is a really soft and fluffy frosting! I don't think I would use it as my go to icing, but, it was good and the hint of almond was a nice touch.

Butterscotch Spice Cake

These cupcakes were really easy to get together and were so light and tender. After reading the reviews from others I added 3/4 of a bag of butterscotch chips. With this addition, you really did taste the butterscotch and toned down the spice cake flavor. I made into cupcakes and baked for 16 minutes. I thought they had really good flavor, but, my husband didn't like the taste of the butterscotch and spice flavor at all. I compromised on a 3 star rating. Based on the review of MrsFisher0729 I topped with marshmallow buttercream frosting from this site.

Creamy Parmesan and Sun-Dried Tomato Chicken Penne

This was fantastic! It was really easy to prepare, so, it would be perfect for a weeknight meal. The flavor from the spice pack was so good! I will try what another reviewer did and try light cream next time. It was really yummy, but, it would be nice to cut some of the calories from the cream and still keep the flavor. Definitely a winner!

Bab's Turkey Mushroom Lasagna Rolls

This was so good and so much better for you using ground turkey. I used a package of ground turkey - which ended up being 1.3 lbs. I used 3/4 of a 15 oz. container of ricotta and 3/4 cup of mozzarella because the mixture seemed a little dry. It had the perfect consistency and rolled without the filling coming out of the sides. Very important you follow the recipe submitter's advice and leave 2" on the end of the lasagna noodles. As you roll the filling will push to the end - if you don't leave the extra room the filling will push out the end. Thanks for the recipe Javaqueen - I will definitely be making again!
