This is how I make my roast all the time. The only recommendations I would add, is the following ingredients (and you eyeball how much of each).
I pan sear my roast to lock in the juices. Before I do that though, I pierce it and put soysauce, worchester sauce, garlic, season salt (or Mrs. Dash) then pan sear it.
I then add it to the crockpot and then include the other ingredients the poster recommended along with a glass of my favorite red wine. DELISH!
