Soft Sugar Cookies IV

Wow - these cookies are amazing! They mixed up easily and well and sat nicely on the sheet. My oven needed 15 minutes to get them just right. The texture, color and flavor are all excellent. I noted that some other reviewers had some issues with rolling these out - these are listed as a drop cookie and perhaps not intended to be rolled out. If you are looking for a quick to the oven tasty cookie that you can count on, look no further.

Overnight Tuna Casserole

This can also be baked in the oven and you do not need to precook the noodles - they will cook in the sauce.

Raspberry Ice Cream

Simple, but wonderful. We had many berries left over from last year - what a wonderful way to use them. I used Splenda in place of the sugar and could not taste a difference.

Rice Pudding II

Berry Sour Cream Cake

Outstanding every time - I just made this again tonight for company with fresh berries from our garden and it got rave reviews. The baking seems to take a bit longer than suggested, but this is a tried and true winner in my book. I have used both fresh and frozen berries with great results. I have always omitted the glaze as well, just our preference.

Banana Cupcakes

WOW to say the least. These worked up quickly and turned out flawlessly. Good texture and what a great way to use up the extra bananas that I had. I did not make the icing - and they are cupcakes, not muffins as some have suggested - they are more cake than muffin for sure.

Baby Shower Raspberry Dip

I made this today and I must confess that I did not read until just now that the raspberries were to be a garnish.. oops. I used splenda and some sugar free raspberry flavoring that I had on had and it turned out very well. In using low fat and sugar free ingredients, I ended up with a guilt free dip for my fruit!

The Best Lemon Bars

Oh my word, these are just wonderful - they go together quickly and taste wonderful. When my husband tasted these, he told me to throw away all the other recipes and only use this one from now on. His clients love these bars! I would suggest the fresh juice - it only takes a minute and gives a better flavor.

Peanut Butter Ice Cream Sauce

When my medical provider said that I had to eliminate chocolate, I immediately thought of peanut butter sauce for my ice cream. This is quick, easy and tastes great. It keeps well too - I made this in January and just tossed the rest in April - it was still just fine.

Ruby-Red Pretzel Dip

I am a big cranberry sauce fan and I adore this dip. It is a bit different because of the ginger and mustard. Whenever I make this, it always vanishes off the buffet.

Hasty Chocolate Pudding

I doubled this and it turned out great - it took only a few minutes in my microwave - it is a newer model and things seem to cook more quickly. I did reduce the sugar by about one third to suit my husbands tastes. Overall, a great and yummy pudding that could not be quicker or simpler to make. Be sure to follow the directions about whisking the ingredients.
