Sweet Potato Cake

Reviewed: Aug. 19, 2010
I made this to use up some extra sweet potatoes I had leftover from Thanksgiving. It had a nice flavor, basically tastes like a spice cake similar to carrot cake. The texture was quite dense though, so I'm not sure I'd make it again. I like my cakes nice and fluffy. Next time, it's carrot cake or nothing!

Raspberry Summer Pudding (English Style)

Reviewed: Aug. 19, 2010
This was very easy to make and set perfectly. The flavor was all right, but it did essentially taste of berries, sugar, and bread. Serving with vanilla ice cream or some sort of cream is a must, to cut the sugary sweetness.

Best Chocolate Chip Cookies

Were inhaled within a couple hours! Hands down one of the best cookies I've ever made.

Bread Pudding II

Reviewed: Oct. 12, 2008
Decent, but too eggy, and if you're planning on eating it with something else, like custard or ice cream, it's way too sweet. In future I would reduce the eggs to maybe 3, and the sugar to 1/2 cup or even less depending on whether you add raisins or not (because remember, they add their own sweetness).

Delicious, fluffy, ridiculously easy! Perfect for a lazy Sunday brunch for two. Loved it, and wouldn't change a thing.

Fluffy White Frosting

Reviewed: Jul. 6, 2008
The flavor wasn't the greatest, but it did have the taste and consistency of marshmallow fluff. It was fluffy, held its shape well, glossy, white, and everyone liked it. I topped chocolate cake and then decorated with fresh berries. It was very pretty!

German Chocolate Cake III

Reviewed: Feb. 12, 2008
Made the cake but used a canned frosting, because I didn't have time to do both. The cake was absolutely STUNNING! Light, airy, moist, chocolatey, sweet but not too sweet, PERFECT! Lacking 3 pans, I crammed it into two and it worked out just fine. Cooking time was a bit longer is all. I will definitely make again, especially when I'm aiming to impress!

No-Fuss Rice Pudding

Reviewed: Feb. 2, 2008
I cooked this on the stove. The taste was pretty good, and the texture was nice and creamy. However, some of the egg separated during cooking so that there were white bits of cooked egg running through the pudding. Still, it was enjoyable, and I would probably make it again, but cook it on a lower temperature so the egg doesn't separate.

World's Best Lasagna

Reviewed: Jan. 2, 2008
I hate to be mean, but this just wasn't good. It was too saucy, and because the meat and sauce weren't separate, it was impossible to alter the meat to sauce ratio. We layered it exactly the way the recipe said to, and ended up with a huge amount of meat sauce left over. Even then, the final lasagna had too much sauce, not enough noodles, and couldn't hold its shape. Not only that, but all it tasted of was tomato, which overpowered even the cheese! The fennel seeds were a nice touch, but there wasn't near enough of it, or of the other spices. I think I will have to stir up the leftovers, put in some macaroni and more spices, and turn it into a pasta bake. Too bad, I had high hopes for this one.

Sugar Coated Pecans

Reviewed: Dec. 25, 2007
This always turns out great, and I have several people addicted now, who request it for every gathering! The only difficult part is not eating it all on the way to the party! Highly recommended!

Spinach Dip with Water Chestnuts

Reviewed: Dec. 25, 2007
I've been making it for years. It always turns out, and I get requests for it at every gathering. There's rarely any leftover after a party. A fantastic recipe, always a success!

Cream Cheese Frosting II

Reviewed: Dec. 24, 2007
The taste was good, and that's why it gets 3 stars. But the texture was just awful! It was so runny that no amount of powdered sugar (literally all the sugar I had in the cupboard) or refrigerating (about 5 hours) was enough to fix it. It is realistically more of a glaze than a frosting, and not at all what I wanted. If you're looking for a fluffy frosting, this is definitely not it.

Scrumptious Sweet Potato Casserole

Reviewed: Dec. 22, 2007
A Thanksgiving tradition now! But it's a bit sweet, even for me and I like sweet. So, I cut the white sugar in half, and that seemed to do the trick.

I substituted walnuts for the almonds, and added some salt and garlic bread seasoning. Yummy! Great basic recipe, thanks.

Spritz Cookies II

Reviewed: Dec. 2, 2007
I was forced to edit my review of this cookie. The first time I made it, they were very tasty and worked okay with my Wilton cookie press. The second time I made it, I couldn't get it to work with the press at all. I ended up rolling the dough into a log, refrigerating it, and then slicing into discs. The cookies were dry, crumbly, floury, and tasteless! I cannot recall making the dough any differently between the two times, so all I can say is that I gave it a rating of 3, 4 for the first time and 2 for the second.

Chicken Pot Pie IX

Reviewed: Oct. 6, 2007
This was excellent! I made it with an oil crust (also from scratch). I egg washed the bottom crust but it was still a bit soggy. Next time I will egg wash it and bake it a bit first before adding the filling. Next time, I will also be sure to put some foil around the edges of the pie to prevent burning. Tasty, definitely a keeper!

Twisty Cookies

Reviewed: Sep. 16, 2007
I cut the chocolate chips to 2 cups, and even then it seemed like a lot of chips. Although the cookies tasted fine and were generally liked by others, I have to say that they were not particularly impressive. They weren't different or interesting. They just tasted like slightly too sweet chocolate chip cookies. If you're looking for a twist on chocolate chip, this isn't it. Also, the recipe says 30 cookies, but I made chips ahoy size cookies and it came out to about 70.

Cornbread Muffins II

Reviewed: Aug. 28, 2007
This recipe was good. Moist, fluffy, and sweet enough to satisfy my husband (who likes it more cake-like) and dry and savory enough to satisfy me (I prefer it a bit more traditional). I used an 8x8 pan instead of muffins, and baked for 45 min. Also, the one carton of buttermilk I had didn't end up being enough, so I had to use half buttermilk and half milk. It still had good texture, although I think when I make again with two cups of buttermilk, it will have better flavor.

Sausage Applesauce Appetizer

Reviewed: May 12, 2007
With all the high ratings, I really thought this would be amazing. Instead, it was too sweet and the combination of flavors was strange. I made it exactly as written. No one at the party particularly liked it, and it even looked unappetizing. Now I'll have to find a use for all this leftover sausage!

Whole Wheat Banana Nut Bread

Reviewed: Apr. 8, 2007
This is the moistest, lightest, fluffiest, BEST banana bread I've ever had! My cooking time was slightly longer, 1 hr 15 min, and I covered it with foil during the last 15 min to keep it from burning. It came out perfectly!
