Quick Clam Spaghetti

Awesome. I made the following changes. Used one TB of olive oil and one TB of unsalted butter. I dissolved a couple of anchovies in the oil before I added the clams. I also used a TON of garlic.

Foolproof Beef and Broccoli

Not too bad. I had to add more stuff to up the asian flavor. I used one small shallot instead of the onion. I also used about a third of a cup of soy sauce, three cloves of fresh garlic, one tablespoon of oyster sauce and some ginger paste. I served it over white rice.

Slow Cooker Chicken and Dumplings

Very good base recipe. I used chicken thighs instead of breasts. Used one can cream of chicken with herbs and one can low fat cream of celery. I sauteed some shallots, carrots and celery in the two tablespoons of butter and added them to the mixture. I used chicken broth instead of water and only one can of busicuits. It was amazing.

Slow Cooker Italian Chicken Alfredo

Very tasty. I made a few changes that made it a bit more flavorful. I used four cloves of garlic and instead of canned mushrooms I sauteed wild mushrooms and shallots and used those. I used low fat cream of chicken soup and low fat cream cheese. I also used thighs instead of breasts. Right before serving I also added a small can of peas for color. Great recipe!

Shepherd's Pie Complete

This was very good. I only used three cans of gravy, omitted the onions (don't like them) and used homemade mashed potatoes. I also left out the cheese as it isn't traditional. Otherwise it was very tastey.

Mexican Chicken Corn Chowder

Man, I am eating this right now and it is awesome! I used precooked chicken from Walmart and added an extra can of corn. I also used Chipotle hot sauce. Excellent recipe, I would make this again for sure!

Mexican Style Shredded Pork

Very tasty, the meat was very juicy and easy to shred. I only used one can of chilies and did not make the rice; we just ate the meat wrapped in tortillas. I plan on using the rest of the meat in enchiladas. Excellent recipe!
