Easy Alfredo Sauce I

This is the perfect base sauce! Since there are few things my kids will eat, and this is one of their favorites, we have this once a week for pasta night. I use unsalted real butter, Frigo shaved Parmesan cheese, and just Great Value brand whipping cream. I dump all three ingredients in the pan at once and then set my burner to the "melt" setting. Just put it on the lowest setting if yours doesn't have a "melt" function. I keep it this low until the butter is completely melted, stirring occasionally. Once the butter is melted, crank it up to medium and let the cheese start melting...it WILL melt and meld, promise! Once the cheese is melted and it's all stringy, I crank up the heat another couple of notches and let it come to a rolling boil, stirring constantly. Let it boil one minute...that's how you get it smooth. Now let's talk flavor. I like very flavorful alfredo sauce. I add salt to taste, several fresh basil leaves, and garlic powder to taste. I add these extras at the beginning. Hope that helps for those of you saying this was bland or that their were timing issues with melting the cheese!

Soooo yummy! I didn't have any parsley or pimentos, so I didn't add those, and I used about half of a large onion because I LOVE onions. Also, I used half a cup of milk instead of water, but I thought it looked a little too pasty, so I added about 2 tbs. of heavy cream. I also used Ronzoni Garden Delight pasta...I like using it for the colours when I have an otherwise monochromatic dish.

Hummus Pizza

I love recipes that can easily be altered to be concocted out of various leftovers in my fridge! Use any kind of spread in place of the hummus, add your own veggies leftover from a salad, top with whatever kind of cheese you have on hand, and this is sure to be a yummy way to enjoy your leftovers!

Scratch Macaroni and Cheese (without "processed cheese food")

I hate the idea of using "processed cheese product" in made-from-scratch recipes. I couldn't find one without it, so I made one up! The whole family loved it, and it was great the second day too!

Chocolate Peppermint Meringue drops

I sometimes have to find creative ways to cook. On this particular night, the kids wanted to make Valentine cookies, but I didn't have any flour, so I knew a meringue cookie it would have to be! These little gems were born of my family's love of time together, yummy treats, and recipes that allow the kids to help! Enjoy!

Chicken Salad

My husband is standing with the refrigerator door open eating the leftovers of this salad from the day before yesterday, and he says, "How hard was it to make this stuff." I said, "not hard at all, why do you ask?" He said, "I was wondering if it was possible to just keep a gallon of this stuff on hand at all times...I could eat this stuff for breakfast, lunch, and dinner every day and never get tired of it!" I just thought I'd come share that with the masses! This is a super yummy recipe! I didn't have celery or water chestnuts on hand, so they were left out, but the bacon and almonds gave it plenty of crisp! Also, I used red grapes just because I like a more colorful salad. Otherwise, I stuck to the recipe exactly.

Pancakes I

I've been using a recipe from a cook book for years, thinking I must just be doing something wrong because I came up with tasteless pasty pancakes. Finally I gave up and started using a mix. This morning, though, determined to make yummy pancakes from scratch, I decided to give these a try, and YAAAAAAAAAAAAAYYYY! Super yummy! All five toddlers loved them, and so did I! I made it exactly according to the recipe...YUM!

Sugar Cookies

So tasty and just what I was looking for! I needed a no-roll, no-refrigerate recipe because I needed some cookies in a hurry, and this was PERFECT! I followed the recipe and directions exactly and got the perfect cookies for the little ones to decorate. I usually like soft chewy cookies, but I loved these and enjoyed the crisp! Plus they were sturdy enough to stand up to being frosted by toddlers!

Pineapple Cheese Casserole
