Authentic, No Shortcuts, Louisiana Red Beans and Rice

I don't know what I did wrong, but this recipe didn't turn out like I expected. I followed all the directions and it just wasn't great. I'm from Louisiana and had high hopes after all the high ratings. This wasn't bad, just not "Authentic Louisiana."

Chicken Pot Pie IX

I've made this at least a dozen times exactly as posted and also without peas (hubby hates peas). I never have leftovers. NEVER. It's that good! I never have trouble with it being dry, just be careful and don't cook the filling too much.

Buttercream Icing

I liked this, although I did tweak it a little. I put 3 cups of powdered sugar and 4-5 tablespoons of milk. It turned out wonderful for a cake. I did use both the shortening and butter and found that as long as you mixed it really well, it didn't have any funny taste to it.

Pollo Fajitas

I tried this tonight and we all really liked it. I forgot the juice at the end and would have loved it with lime juice instead of lemon. A few reviewers did not like the soy sauce, I can understand that. I liked it, but you could just leave it out. I would suggest using lime juice instead of soy sauce. I also cooked all the meat first (with the marinade), took it out of the pan and put the veggies in alone. I did use red peppers because that's what we had on hand. It's quick and easy and turned out great!

Homemade Shake and Bake Mixture

Really good! Makes a lot so either cut the servings or put some in a bag in the fridge. I wish I had made all of it so I could save it! I cut it in half and we found it just a little salty, but still very good!

Awesome Slow Cooker Pot Roast

Just as it says, Awesome! You can throw some quartered potatoes and baby carrots in there and they come out tasting wonderful, too. One trick is to use the can full of water instead of measuring out 1 1/4 cups of water. I'm all about not dirtying more dishes than I have to! ;) Very easy, and if you don't find that size pot roast, just use what you can find. I think the one in my crock pot right now is about 2 1/2 - 3 lbs. It always turns out perfectly.

Special Buttercream Frosting

I tried this today and loved it. I did as others suggested and put 1 cup butter and 1 cup shortening, it was awesome. My husband even liked it, and he's pretty picky sometimes! My only advice is to try not to let it get warm while you make it. I made the mistake of having the mixer sitting on top of the oven while my cake was cooking, and it softened a bit much, but was easily fixed. This recipe made just a bit more than I needed, but my son didn't mind!

Baked Pork Chops I
