I have lived in California, Colorado, Arizona and Sweden; I am settled now in SE Arizona. My husband and his family are my biggest fans--my husband is always willing to eat my experiments! We travel and camp with our horses; trail riding is great fun. I usually cook full course meals when we camp; we even opted for a bigger refrigerator and an oven in our horse trailer!
My favorite things to cook
I love to bake, both sweet items and breads. Mexican food is my number one favorite, followed closely by Chinese. Spicy foods are a must! I grill a lot year round. I am very fond of fish, fresh vegetables and casseroles. Luckily for me, my husband feels the same way.
My favorite family cooking traditions
We always had lasagna and clam chowder Christmas Eve when I was growing up and the full turkey spread for Christmas dinner. I adopted the lasagna for my own family, as well as the turkey. Recently the lasagna has morphed into a seafood white-sauced version for my new family which includes a couple vegetarians, and the turkey is usually a leg of lamb for the carnivores on Christmas Day. Our vegetarians eat elsewhere on Christmas Day!
My cooking triumphs
Turning out great meals while camping. I rely on at-home prep work as much as possible, both to keep the actual cooking easy and to save room in the frig.
