Eggs Benedict

This is my first time making eggs Benedict (or poaching and double boiling in general) so I followed the recipe exactly. The hollandaise was a bit too lemony for us, so I'll be adjusting that next time, but otherwise it was a delicious introduction!

Buttermilk Oatmeal Pancakes

Made these exactly per the recipe. Texture was a bit off for me. Maybe better if the oats had been blasted in the blender or food processor first? Might try a second attempt with that method.

A somewhat temperamental dish, depending on your quality of ingredients, but delicious when done just right. I add chicken when making this for various potlucks.

Maple Sugar Cookies

Made the dough EXACTLY according to the recipe and let it sit over night. Was easy to work with in the morning. Cooked for 7 min and they held their shape and moisture throughout the day/evening. Added two large pecans on top of half the batch and made maple frosting for the other half. Both were delicious! My husband has already requested that I make these again.

I didn't account for rising very well, but I have to say the the crunchy parts over the side of my pan were the best! Wonderful even a couple days afterward. Held moisture very well.

White Chocolate Macadamia Cranberry Dreams

We substituted almonds for the macadamias, and they were still delicious! Excellent consistency, they stayed soft easiy into the next day.
