Butternut Squash Soup II

This was not difficult to make but produced the blandest soup I think I've ever eaten. I had to add so many spices to this to make it worth keeping that I lost count. Won't be making this version of butternut soup again.

My husband and I love this. We make it all the time exactly as directed. It's a great, easy, healthy side dish that goes especially well with chicken or pork.

Green Beans with Cherry Tomatoes

We got a big bag of beans and a big lot of cherry tomatoes from our CSA and I found this. I made it as directed but added some parmesan cheese before serving. My father-in-law said these were the best green beans he'd had in his entire life and he is 79 and spent most of his life growing whatever he ate. So that's saying something.

Baked Pumpkin, Sweet Potato, and Coconut Milk Soup

This is great! I commonly make a pot of soup on the weekend to bring for lunch. My family doesn't much like squash or pumpkin but I do. I made this exactly as directed and it was lovely. One day I added some chicken to it and another day I added some rice. Both went well. Made it again the following week but forgot pumpkin and it was still tasty.

Tortilla Espanola

I thought this was great and very easy. Used much less oil than a lot of the recipes I'd seen online and that was appreciated. Kids devoured it. We added a little cheese and some chorizo but I don't think it is needed.

Sukhothai Pad Thai

We were really disappointed with this. A half cup of oil seems a bit much to cook the eggs in and when the dish was done the overwhelming flavor was vinegar--actually, that was practically the only flavor. Not sure why it's so highly rated but to each his own.

Day Before Mashed Potatoes

For taste alone, these would get a five. I made them the night before thanksgiving and tasted them and they were sinfully good. So rich and flavorful. I felt guilty with each bite, but who cares over the holidays. However, the overnight thing didn't work. I took a few other reviewers suggestions and heated them in the crockpot, but had to add additional butter and milk quite often to keep them from drying out. They turned out fine, but all the extra work and calories didn't seem worth it. I think I'd rather make these the day of and cut time elsewhere.

Pumpkin Cheesecake II

Very good. The center of mine was a bit too wobbly so next time I might cook it for the full 55 minutes. I didn't really like the pecans in the crust so next time I might substitute another nut or just go plain graham crackers. Even so, the filling tasted great! Will definitely make this again.

Cranberry Sauce

SO GOOD and SO EASY! I could have eaten this stuff with a spoon. I will never buy cranberry sauce again. Thickened up beautifully in the fridge overnight.

Pumpkin Chocolate Chip Muffins

These are quite nice. I added a dash of ginger to the recipe. I'm not sure if it added a lot but it certainly didn't detract. The spicy pumpkin is an interesting contrast to the choc chips. At first I wasn't sure I liked it but after two-or-three (I made mini-muffins) I was hooked. Best of all, my two and four year old LOVED them! That's saying something.

EAGLE BRAND® Mini Cheesecakes

These turned out great. I'm a big cheesecake fan and had never tried it with condensed milk. Yummy. Very easy too. Plus they're so cute. I tried it with the chocolate chips, which floated to the bottom a bit, but didn't detract at all. This one's a keeper.

Jo Jo's Favorite Banana Muffins

I found these muffins to be a bit dry. I added 1/2 cup additional banana and a streusel topping, even so, still dry and not too flavorful. I'll probably try these one more time, to see if it was just a fluke, but give up if they stay the same.
