Pumpkin Casserole

I made this for my family trying to expand the vegetable selection of our weekly menus. I followed suit and reduced the sugar, plus I upped the savory seasoning a bit to make it less dessert-y. We have a rating system in our house, based on how soon they would like to eat a dish again (tomorrow, next week, next month, next year) and this scored 'tomorrow' by everyone! Huzzah!! Thanks for a great new family favorite!

Eclair Cake

try microwaving your frosting until it becomes liquid. . Don't over heat it, just enough so you can pour it. Then you can simply pour it over the top, and when it cools, it will have smooth finish, just like a real eclair.

Baked Potato Skins

This was definitely my go to recipe this holiday season! Most of the get togethers that we went to were finger foods only, and even with using 5 lbs of potatoes, this was the first platter to empty at every party. I haven't had a recipe that I didn't change at all in a long time, but we loved this one exactly as is! Thanks for sharing. :)

Bacon and Cheddar Deviled Eggs

These are quick to disappear, so make sure you get one right away! They were a huge hit at the party we took them to, we made 3 or 4 dozen and they were gone almost instantly! Thank you for a great recipe!

Cannoli Cake Roll

I was only looking for a cannoli filling recipe when I found this one- and it really delivered! The addition of the cream cheese makes the filling more stable, which is perfect for the wedding cake I am putting it in. As a professional baker, I can tell by looking at the recipe that it would be excellent, but my five stars is for the filling alone. :)

Mini Cheesecakes I

I used the graham crumb crust suggested by Terrimom, but followed the rest of this recipe. OMG, yum! I love that this is quick and easy, which means I can make them often. We did also try a little variation, by setting aside 3/4 cup filling and mixing in 1/4 cup strawberry jam (no lumps). Then swirled that in with the regular filling for a nice change of pace. This one is a keeper!

Marzetti® Hawaiian Slaw

Quick, easy and a great change of pace for a summer picnic! I made this for a family pot-luck and it was definitely a success. I loved how easy it was to make, since I had about 30 minutes between getting home from work and the time I needed to leave for the party.

Hens with Apricot Rice Stuffing

Great recipe! I normally do not try recipes on this site with less than 30 ratings, but this one caught my eye as I was searching for something to use up some cornish hens. What FANTASTIC flavor!! This one will be on our family menu often. I used a little balsamic vinegar w/the preserves (instead of white cider vinegar) for a little extra punch, and it was delicious. Moist, yummy, and kid approved!

Tres Leches (Milk Cake)

Although this wasn't my favorite cake, I made it for my husband's co-workers and they all loved it! I made the cakes (4 of them all together) each in disposable pans, they baked up perfectly. I did pour ALL of the recipe amt of milks over the cakes and it was completely absorbed the next morning. The whipped cream icing was too sweet for my taste, even after cutting the sugar back to half, so if I were to do this again I'd cut it back even more. Overall, this recipe was very easy to work with, turned out just like I expected, and was the perfect end to a spicey mexican luncheon!

Shortbread Crust

This crust tasted great! I made it for a coconut cream pie for my husband and it was a delicious combination. It didn't really hold up very well when serving though, and fell apart. If you don't care about taking a slice of pie out of the pan in pieces, then I highly recommend this recipe!

Twice Baked Sweet Potatoes

I made this recipe last year and received rave reviews! Even the 'non-sweet potato' folks enjoyed it. I did cut back on the cream cheese and brown sugar just a little, and found the flavor perfect. The nuts and vanilla add such a wonderful touch, it makes you wonder why you never tried that combo before! This year, it's the dish that everyone has requested again! Thanks a bunch to Shannon for this recipe, you've made me the sweet potato queen in my family! lol
